TITLE : Head Chef
LOCATION : Trout Hotel
RESPONSIBLE TO : Hotel Owner
RESPONSIBLE FOR : All Chefs and Kitchen Porters
HOURS OF WORK : 45 Hours over a five day period
LOCATION: Trout Hotel, Cockermouth ,Cumbria
JOB ROLE:
The effective and efficient management and delivery of all Food provided by the Trout Hotel, with the aim that they provide consistently the highest quality of cuisine , are cost effective, achieve target and raise the standard of cuisine provided by the Trout Hotel.

KEY RESPONSIBILITIES
1 To ensure the effective management and delivery of all food related areas within
the Trout Hotel.
2 Meet the needs of our customers.
3 To act as team leader within the kitchen.
4 Provide innovative ideas in menu development.
5 Work with the Food & Beverage Manager in the development of new menus within set timescales.
6 Ensure best quality and price from suppliers.
7 Maintain and improve Gross Profit Margin and cost controls in the kitchen.
8 Enforce Kitchen, personnel and food hygiene with the kitchen.
9 To work with the F & B Manager in introducing Standard Operation Procedures for all team members within the department.
10 Ensure correct stock control and ordering for the kitchen.
11 To be responsible for managing the time keeping records for all team members on your shift.
12 To ensure the effective management, motivation, training and development of all team members employed in the kitchen.
13 To ensure the Trout Hotel comply with all relevant legislation relating to health and safety and food hygiene.
14 To promote a safe, healthy and environmentally secure environment.
15 To ensure the ongoing compliance with statutory requirements relating to the work of the Department.
16 Attend management and heads of department meetings when required.
17 Attend and perform appraisals for all kitchen team members
18 To work with the Heads of Department in implementing promotions, sales targets and events.
19 Attend training sessions and training activities as requested.
20 Any other reasonable request of line manager.

All managers employed by the Trout Hotel will be required to meet the following standards where applicable:
- To be responsible to the Hotel owner for managing your shift.
- To be fully aware, and ensure your teams awareness of :
- Licensing regulations and laws.
- Employers Fire Safety regulations.
- Health and Safety regulations.
- Food Safety regulations.
- HACCP regulations.
- To act as duty manager if required.
- To be aware of your department's Standards of Procedure and ensure that your team have full knowledge of the same, and to provide training if and when necessary to your team to fill any skill gaps.
- To ensure the punctuality and time keeping of your team to meet rota requirements.
- To motivate team in achieving incentive targets through product knowledge training and on the job training.
- To undertake any other reasonable tasks set by the Managing Director.
Job Type: Full-time
Pay: £35,000.00-£40,000.00 per year
