Overview
We are seeking an energetic hands-on Head Chef to lead kitchen operations, producing innovative fresh menus & meals whilst managing our small kitchen team.
You will demonstrate the skills necessary to consistently produce good quality food from scratch whilst managing incoming orders efficiently, presenting dishes with creativity and imagination.
You will be equally comfortable interacting with colleagues and customers and demonstrate a personal drive to develop your skills and capabilities through work.
Using local produce and sourcing the best food and drink available nationally The Theberton Lion is a family owned and operated inn with an emphasis on quality, Independence, authenticity and choice.
Responsibilities
- Developing menu ideas and realising these in agreement with the Landlord.
- Overall supervision of the kitchen and oversight of kitchen assistants.
- Preparing, cooking and presenting food in line with standards agreed with the Landlord.
- Keeping kitchen working and storage areas clean and tidy at all times.
- Keeping preparation at the right level.
- Planning in advance for busy periods and advising the Landlord of additional requirements accordingly.
- Making sure that food is served promptly to agreed levels of service, responding swiftly to orders from front of house.
- Monitoring food production to ensure consistent quality and portion size.
- Overseeing stock control ensuring adequate stock levels are maintained, anticipating shortfalls likely during busy periods.
- Train and mentor kitchen staff to enhance their skills and performance.
- Following relevant hygiene, health and safety guidelines to retain the Theberton Lion’s 5 Star EHO rating.
- To be in possession of, and fully conversant with, The Theberton Lion’s Emergency Procedures and to take part in emergency drills as required.
- Undertake such tasks as may be required from time-to-time to assist in the general running of the pub as mutually agreed.
Skills, Knowledge, Experience and Training
- Significant prior experience in a professional kitchen to at least Sous Chef standard.
- Creative flair in producing menus and dishes.
- A keen interest in, and excellent knowledge of food and cooking.

- Excellent communication and people skills.
- Able to work well under pressure and the ability to work quickly and accurately.
- Imagination in food presentation.
- Experience of working in a customer focussed environment.
- Excellent time management and timekeeping.
- High standards of cleanliness and hygiene with a Level 2 Food Safety and Hygiene (Catering) qualification or ideally higher.
- Flexibility with regards to working hours.
- Conform to licensing law - be over 18
- Ability to co-operate and work well in pursuit of team goals, supporting others and sharing information.
- A professional qualification is desirable but not essential, ideally either Level 2 Certificate in Hospitality and Catering Principles or Level 3 (NVQ) Diploma in Professional Cookery or equivalent.
- A full UK driving licence is desirable.

This post will require the successful candidate to work unsocial hours on occasion, which will include early mornings, evenings, Saturdays, Sundays and public holidays. 37 hours per week minimum.

Pay: £15.00-£16.00 per hour
