About the role
The Oswin Project is a prisoner rehabilitation charity in the North East. We're expanding our Baking Out enterprise into a new, purpose-built production facility at HMP Northumberland, and we're looking for an experienced production baker to help us grow.
You'll work alongside our head baker to produce high-quality breads, pies and a wider range of baked goods at scale for our own cafés and a growing list of wholesale customers. You'll also train and mentor serving prisoners, giving them the skills and confidence to build a career in baking after release.
This is hands-on production work with real social purpose.
Responsibilities
- Produce our full range to a consistent, high standard: breads, pies, quiches, cakes, traybakes and seasonal lines
- Help manage production schedules for wholesale and retail demand
- Maintain food safety, hygiene and quality control throughout
- Develop and scale recipes for commercial production, minimising waste
- Train and mentor prisoner learners and support them towards qualifications
Requirements
- Minimum 1 year production bakery experience (commercial/wholesale)
- Strong bread expertise (artisan and high-volume)
- Level 3 Food Safety qualification or higher
- Formal bakery qualifications (City & Guilds, NVQ Level 3 or equivalent)
- Experience training bakery teams
- Physically able to carry out hands-on production work
- Willing to work in a prison environment and obtain security clearance
Desirable
Wholesale bakery experience; recipe scaling; production planning software; craft baking skills; HACCP knowledge; experience in social enterprise or with disadvantaged groups.
