Full job description

HEAD CHEF WANTED — UNAGI, ALTRINCHAM

We’re looking for a Head Chef to take the reins of the kitchen at Unagi.

A fast-paced enviroment with huge potential, looking for someone to take our kitchen & our food to the next level.

Sushi. Woks. Small plates. Big flavours. A busy restaurant. A very busy Deliveroo. No day is the same as we look to drive the brand forward.

We’re looking for someone who can lead a kitchen properly - someone who loves food, cares about standards and can build a kitchen team that actually enjoys coming to work.

WHAT YOU’LL BE DOING:

- Leading the kitchen team day-to-day

- Keeping our food consistently brilliant

- Developing, training and getting the best out of the chefs around you

- Working with us on new dishes, specials and menu development

- Taking ownership of GP, stock, wastage and kitchen labour with the latest systems.

- Keeping food safety and kitchen standards exactly where they should be

- Working closely with the FOH team - one restaurant, one team

- Helping us push Unagi forward and make it even better

WHO WE’RE LOOKING FOR

You don’t necessarily need to have spent your entire career cooking Japanese food.

You do need to be a great chef, a strong leader and someone who genuinely cares.

We want someone who:

Leads from the front
Stays calm when the printer starts having a meltdown
Can develop people rather than just shout at them
Understands the numbers as well as the food
Takes pride in a clean, organised kitchen
Has ideas and actually wants to use them
Wants to put their own stamp on a restaurant

Experience with Japanese / Asian food, sushi or wok cooking would obviously be a massive bonus.

Because this isn't a Head Chef role where you're handed a laminated spec book and told not to touch anything.

We want someone with ideas, personality and ambition.

You’ll have the freedom to develop the kitchen, work on the menu, build your team and genuinely influence where Unagi goes next.

Salary: Competitive, dependent on experience
