Shift Pattern: 5:00pm – 2:00am, any 5 days out of 7 on a rota basis

The Role
We are looking for an experienced Head Baker to lead our night shift production team. You will oversee daily bakery operations, ensuring consistent quality while maintaining an efficient, well‑organised workflow.
Key Responsibilities
- Lead, manage and develop the bakery team during night shifts
- Oversee bread and pastry production, including dough handling and shaping techniques
- Work closely with production leadership to drive quality, consistency and efficiency
- Support, mentor and motivate team members, encouraging development and progression
- Maintain excellent health & safety and food safety standards
- Identify opportunities to improve efficiency, reduce waste and increase yield
- Plan staffing and production flow to ensure smooth operations
- Ensure compliance with good manufacturing practices and audit readiness
About You
- Extensive experience in artisan baking, including bread and pastry production
- Strong leadership skills with experience managing teams
- High level of expertise in fermentation, proofing and baking techniques
- Sound knowledge of food safety, hygiene and health & safety standards
- Passionate about baking with a commitment to quality and continuous improvement
- Well organised, reliable and able to manage time effectively in a fast‑paced environment
