Full job description

Le Mini Macaroon is a boutique bakery specialising in beautifully handcrafted macarons and premium sweet treats. We are looking for a passionate, hands-on General Manager / Baker to lead our Newcastle upon Tyne operation and help grow the business while maintaining the highest standards of quality, presentation and customer service.

This is a unique role for someone who combines strong management and commercial skills with a genuine passion for baking and food production.

The Role

As General Manager / Baker, you will take overall responsibility for the day-to-day running of the bakery, team management, production, customer experience and business performance while delivering on trade shows on weekends.

You will be a hands-on leader who is comfortable working both in the kitchen and in the front of house, ensuring that every product leaving Le Mini Macaroon meets our standards.

Key Responsibilities

Bakery & Production

Lead and oversee daily production of macarons and other bakery products.
Prepare and bake products to consistently high standards.
Follow recipes, production schedules and quality-control procedures.
Develop new flavours, seasonal products and creative offerings.
Ensure excellent presentation, consistency and attention to detail.
Manage stock levels, ordering and ingredient rotation.
Minimise waste while maintaining product quality.
Maintain high standards of food hygiene, cleanliness and organisation.

General Management

Take full responsibility for the day-to-day operation of the Newcastle bakery.
Lead, motivate and develop the bakery and customer-service team.
Create staff rotas and manage staffing levels according to business needs.
Train new employees and ensure all team members follow company standards.
Monitor sales, costs, margins and overall business performance.
Manage opening and closing procedures.
Deal confidently with customer enquiries, feedback and complaints.
Ensure the shop provides an exceptional customer experience at all times.

Business Development

Help increase sales and profitability through effective operational management.
Support marketing, promotions and seasonal campaigns.
Identify opportunities for new products, events, collaborations and corporate orders.
Build relationships with local customers and businesses.
Contribute ideas to help develop and grow the Le Mini Macaroon brand in Newcastle.

About You

We are looking for someone who is:

Passionate about baking, patisserie and high-quality food.
Experienced in a bakery, pastry kitchen, café, restaurant or food-production environment.
Confident managing and motivating a team.
Organised, reliable and able to work independently.
Commercially aware, with an understanding of sales, costs and margins.
Creative and enthusiastic about developing new products.
Comfortable working in a fast-paced environment.
Customer-focused with excellent communication skills.
Highly organised with strong attention to detail.
Willing to be hands-on and lead by example.
Flexible regarding working hours, including weekends and busy seasonal periods.

Essential Experience

Previous professional baking or pastry experience.
Previous supervisory or management experience.
Good knowledge of food hygiene and kitchen safety.
Experience working to production schedules and maintaining consistent product quality.
Strong organisational and team-management skills.

Desirable Experience

Experience making macarons or French patisserie.
Experience managing a bakery, café or food business.
Experience with stock control, ordering and food-cost management.
Experience developing new recipes and seasonal products.
Experience with corporate, wedding or large event orders.
