Full job description

The White Hart, Witley is the smokehouse HQ of Dirty Sixth, a small independent modern British concept committed to serving 100% wood-smoked barbecue, proper burgers, craft beer and cocktails.

We're looking for a pitmaster to run the fire. The pit gets lit at 4am, every day, so the meat is hot, fresh, and ready to serve by midday. This job is for early birds and nocturnal night owls. If you can't function at 4am, don't apply.

You'll work alone for long stretches through the early hours, tending a live fire with no shortcuts and no one watching over your shoulder. That means judgement, discipline, and the ability to keep a fire honest for hours without supervision.

Experience isn't always necessary, full training will be given, but you must be committed to doing the job properly and give a toss about what you're sending out.

What we're looking for:

Comfortable working solo through the early hours, managing a live fire unsupervised.
Genuinely early-rising or night-owl body clock, this is a 4am start, not a 4am-if-I-have-to.
Strong butchery skills, breaking down primals, skinning, trimming, and prepping meat for the smoker.
Ability to turn off-cuts and trimmings into sausages and burgers, nothing goes to waste.
Patience and consistency, low and slow barbecue punishes shortcuts and rewards discipline.
Ability to read a service sheet, prioritise, and hit the midday deadline every single day.
Willingness to run a thorough cleaning programme at the end of each shift.

Experience:

Proven experience in butchery or meat preparation within a professional kitchen.
Live-fire or barbecue-specific experience preferred, but not essential if you're willing to learn properly.
Strong knowledge of food safety standards and hygiene practices.
Ability to work unsupervised and self-manage a shift from start to finish.
Calm, methodical temperament, no panic, no drama, just fire and meat.

We put a lot of love into our food and this is a genuine opportunity to learn real-deal barbecue from the ground up, starting with the fire itself.

If you regularly sleep in, need company through the small hours, or can't handle solitude and a live fire at 4am, don't apply.

We can offer a good basic, full training, days off, coffee, high-fives, and a big hug if you ever need it.

Starting salary of £30k. If you're better than that, come and prove it and we'll pay you more.
4 shifts a week, no splits, 45 hours.
28 days paid holiday per year, pro-rata.
Staff meals provided while on shift.
50% discount off food while not on shift.
Live-in available for the right candidate.
