Chef de Partie – The Peterboat, Leigh-On-Sea

East Anglia Pub Company is a family-based company with over fifty years' experience in the licensed trade. We are passionate about our pubs and believe in great service and fine food. We are excited to announce an opportunity for an experienced and talented Chef de Partie to join our established kitchen team at The Peterboat, Leigh-On-Sea.

You'll play a key role in delivering outstanding food consistently across all services, working as part of a close-knit team that takes real pride in what it does. You will work under the guidance of the Senior Chef and Head Chef, taking responsibility for your section and contributing to the high culinary standards our guests have come to expect.

Your Day-to-Day as Chef de Partie:

Take full ownership of your designated section, ensuring consistent quality and presentation
Prepare, cook, and present dishes to the highest standard across all services
Support the Senior Team in the smooth running of kitchen operations
Assist in training and mentoring commis chefs and junior kitchen staff
Maintain impeccable food safety, hygiene, and health & safety standards at all times
Monitor mise en place and manage stock levels for your section efficiently
Assist with menu development, recipe testing, and seasonal specials
Ensure all dishes leave the kitchen meeting our exacting quality and presentation standards
Communicate effectively with front-of-house and kitchen teams during service
Contribute to a positive, professional kitchen culture

What We're Looking For:

Proven experience as a Chef de Partie, or a strong Demi Chef de Partie ready to step up
Solid knowledge of kitchen operations, food preparation techniques, and cookery methods
Experience in a busy, high-volume catering environment
Level 2 Food Safety Certificate (Level 3 preferred)
Strong organisational skills with the ability to work well under pressure
Good communication skills and a collaborative approach to teamwork
Flexible availability including evenings, weekends, and bank holidays
A genuine passion for food quality and culinary development
