APPLICATIONS ARE INVITED FOR A VACANCY AS:

A CATERING & RETAIL MANAGER

Reporting to the General and Compliance Manager, the main responsibilities and duties include:

Ensuring the department is compliant with all food and that Health and Safety regulations are followed at all times.
Planning menu’s and ordering supplies, maintaining stock to the agreed levels, ensuring a plentiful supply to meet customer needs.
Be aware and ensure adherence to portion sizes and control portion standards during production and service.
Ensure the prompt service of all meals and services at the required times, catering for special dietary requirements. Promote good safety habits and methods of work.
Line management responsibility for the Catering and Retail staff including all training, appraisals, first line disciplinary, counselling and absence action, ensuring completion of all relevant documentation and records.
Preparing staff rosters and workloads, re-organising service delivery at short notice to ensure the maintenance of standards.
Undertaking the planning and execution of monthly stock takes, the invoicing of 3rd party credit customers and the timely placement of food & beverage orders.
Monitoring profit margins and adjusting pricing to maintain them.
Communicating effectively to all staff and management.
Follow key procedures and sign in / out of all keys.
Ensure all near misses, accidents, mechanical or electrical defects are reported in accordance with policy.
To be the licence holder for the retail shop & landside Bar.

Desirable Skills:

The working hours are 30 – 37.5 hours per week and will require some flexibility.

Employment is subject to successfully clearing all background checks and medical.
