Assistant Restaurant Manager – Penny Blue at The Halston
Salary: £29,500 – £32,000 per annum 42.5 hours per week
The Halston is an award-winning independent hospitality business in the heart of Carlisle, combining luxury accommodation, exceptional food and drink, and outstanding guest experiences.
We are looking for an ambitious, experienced and highly motivated Assistant Restaurant Manager to join the team at Penny Blue and work alongside our General Manager – Restaurant & Bar. This is a key leadership role for someone who thrives in a busy operation, leads from the front and takes genuine pride in delivering exceptional service standards.
This role is ideal for an experienced Assistant Manager looking for their next challenge, or a strong Supervisor ready to step into a management position within a growing independent business.

Penny Blue is a stylish, contemporary restaurant and bar operated independently by The Halston. We serve modern British food with a focus on quality seasonal ingredients sourced from trusted local suppliers.
Alongside our restaurant offering, we operate a busy cocktail and wine bar, private dining spaces and support a varied calendar of events, making this a diverse and rewarding management role.
The Role
Working closely with the General Manager – Restaurant & Bar, you will help lead the day-to-day operation, ensuring consistently high standards of food service, guest experience and team performance.
This is a hands-on role and you’ll be expected to be visible on the floor, supporting the team during busy services and leading by example.
Key responsibilities include:
- Supporting the management and development of a front of house team of up to 25 team members
- Delivering exceptional guest experiences and maintaining high service standards
- Coaching, training and motivating the team
- Assisting with recruitment, onboarding and staff retention
- Supporting rota planning and labour control
- Cash handling, cash-ups and financial procedures
- Stock control and ordering
- Assisting with reporting, administration and operational performance
- Ensuring compliance with company procedures and health & safety standards
- Supporting the wider management team across restaurant, bar and events operations when required
What We’re Looking For
We are seeking someone who is committed, reliable and genuinely passionate about hospitality.
You’ll have:
- Experience in a supervisory or management role within a quality restaurant, hotel or hospitality environment
- Strong leadership skills and the ability to motivate and develop a team
- Excellent communication and organisational skills
- High personal standards and attention to detail
- Confidence handling cash and following financial procedures accurately
- A professional, guest-focused approach
- The flexibility to work evenings, weekends and late finishes as required
- A positive attitude and willingness to support the wider business when needed
