We are looking for an enthusiastic Sous Chef to embody our kitchen concepts - working with fresh seasonal produce to deliver a vegetarian and vegan menu focused on big flavours and sustainable small plates with a casual feel. Alongside this, the daytime offers a brunch menu that reflects our evening flavours but is more accessible for our day time passing trade. We also have our highly sought after vegetarian Sunday roast. You will be working with professional individuals that make up a strong team in a good energy atmosphere. The role will be challenging, fast-paced and a lot of fun.
Key Role Requirements & Responsibilities
- Running key shifts
- Monitoring portion and waste control to maintain profit margins
- Control daily/weekly ordering from correct suppliers based on demand
- Experience in creating fresh vegan, vegetarian, meat & fish cuisine
- Help the Head Chef with the responsibility of running the kitchen
- Have a developed palate and passion for a wide range of cuisines
- Drive the highest food hygiene standards
- Be hands on at all times
- Be GP driven and skilled in stock management
- Experience running a busy kitchen
- Hold team well being and planet well being with same importance as delivering & driving profit
- Be personable and level headed in high pressure environments
- Understand the value in training and developing teams
- Have strong appetite for the Bristol food scene
We love using produce from small, market garden suppliers and demand produce farmed responsibly across our menu that changes throughout the year. The kitchen has focus on locally sourced plant-based dishes.
The Canteen opened in 2009 to serve people in and around Hamilton House and Stokes Croft, Bristol. With award nominations and citywide recognition, The Canteen is a place to meet, eat, drink, and listen to some of Bristol’s best live music.
