Mill Race Moto isn't just another café…
We're creating an independent destination that brings together artisan baking,
specialty coffee and automotive culture in a beautifully designed space just outside
Colchester.
By day, we'll be serving exceptional food and coffee. Surrounding by a carefully
curated collection of classic cars and motorcycles, regular enthusiast meets, and a
welcoming community of people who appreciate craftsmanship, quality and doing
things properly.
We're founded by two hospitality professionals with over 25 years' experience who
also happen to be lifelong car and motorcycle enthusiasts. We're building the kind of
place we'd want to spend our own weekends in.
And at the heart of it all will be the bakery.
We're looking for a talented baker to join us from the beginning and help shape
something genuinely special.
The Opportunity
As our Lead Baker, you'll play a key role in developing and delivering a bakery
offering that becomes part of the identity of Mill Race Moto.
This isn't a role where you'll simply follow somebody else's recipes…
You'll have the opportunity to:
Help build the bakery operation from day one
Influence product development and seasonal specials
Work with quality ingredients in a brand-new commercial kitchen
Produce exceptional breads, pastries and baked goods that become
destination products in their own right
Be part of creating a business and community from the ground up
We're looking for someone who gets excited by craftsmanship, takes pride in the
details and wants to put their own stamp on something.
The Role
You'll be responsible for producing a high-quality range of:
Sourdough and artisan breads
Viennoiserie and pastries
Cakes and seasonal specials
Daily bakery products and retail items
You'll also be responsible for:
Managing dough production from scratch, including fermentation, proofing
and baking
Maintaining exceptional standards of quality and consistency
Managing stock and minimising waste
Upholding food safety and hygiene standards (HACCP)
Contributing ideas, creativity and continuous improvement to the bakery offer
About You
You're a craftsperson first and foremost.
You take pride in your work and understand that great baking comes from
consistency, attention to detail and genuine care for the product.
Ideally, you'll have:
Experience in an artisan bakery or high-volume café kitchen
Extensive experience with both commercial machine production and
traditional hand techniques
Strong knowledge of baker's percentages, fermentation and sourdough
management
A passion for producing genuinely exceptional products
A positive, proactive attitude and desire to help build something from the
ground up
And if you happen to be into cars, motorcycles or automotive culture yourself, you'll
probably feel right at home.
