Castle Carvery Racecourse - Senior Chef

We’re looking for a passionate and reliable Senior Chef to join our kitchen team. At Castle Carvery, our kitchens are at the heart of what we do - serving high-quality, freshly prepared roasts and classic main menu dishes in a fast-paced, guest-focused environment. As Senior Chef, you’ll support the Head Chef in leading a supportive and energetic kitchen team who take pride in consistency, presentation, and delivering an excellent guest dining experience every day.

About You
You’ll thrive in a fast-moving kitchen, work well as part of a team, and confidently take the lead when required. You’ll have a strong understanding of food hygiene, kitchen organisation, and financial awareness. Along with a positive attitude and a drive to develop both yourself and the team around you.

Key Responsibilities
Your role will include (but is not limited to):

Supporting the Head Chef in the day-to-day running of the kitchen.
Preparing and cooking high-quality carvery meats, sides, and accompaniments to specification.
Setting up and maintaining the carvery deck and kitchen for smooth and efficient service.
Leading and motivating the kitchen team to deliver consistent, high-quality food.
Working across all kitchen sections, including carvery and main menu stations.
Receiving and storing deliveries in line with food safety standards.
Completing kitchen records, due diligence checks, and food safety documentation.
Maintaining excellent food hygiene and cleanliness standards throughout.
Ensuring all prep, cooking, and presentation meets brand standards.
Cleaning down and resetting the kitchen at the end of each shift.
Supporting the Head Chef in achieving GP targets.
Actively working to minimise wastage levels through effective stock control, portioning, and rotation.
Assisting with stock takes & ordering.
Driving the team to success by building a culture of accountability, efficiency, and high performance.

Experience

Previous experience as a Senior Chef or strong Chef de Partie ready to step up.
Experience in a high-volume or carvery environment is beneficial.
Good understanding of kitchen financials, food cost control, and stock management is desirable.
Full training and onboarding will be provided.
