As Sous Chef, you will play a key leadership role within our kitchen team, supporting the Head Chef in the day-to-day management of kitchen operations while ensuring the highest standards of food quality, presentation, and service. This is an excellent opportunity for an experienced Sous Chef or a strong Junior Sous Chef ready to take the next step within a busy, high-quality hotel environment.

- Support the Head Chef in overseeing all kitchen operations and ensuring smooth service across all food outlets.
- Lead and motivate the kitchen brigade, maintaining high standards of performance, professionalism, and teamwork.
- Ensure all dishes are prepared and presented to the highest standards, delivering consistency in quality and presentation.
- Assist in menu development, seasonal specials, and the introduction of new dishes using quality Scottish produce.
- Manage stock control, ordering, inventory management, and supplier relationships to maintain efficiency and profitability.
- Monitor food costs, portion control, and waste management to support business targets.
- Ensure full compliance with food safety, hygiene, and health safety regulations.
- Train, mentor, and develop junior chefs, fostering a positive learning environment and supporting career progression.
- Take responsibility for kitchen operations in the absence of the Head Chef.
- Proven experience as a Sous Chef, Junior Sous Chef, or Senior Chef de Partie within a quality hotel, restaurant, or hospitality environment.
- Strong leadership skills with the ability to inspire, motivate, and develop a team.
- Passion for high-quality food, seasonal ingredients, and innovative cooking techniques.
- Excellent organisational and time-management skills with the ability to perform under pressure.
- Strong understanding of kitchen financial controls, including food cost management and stock control.
- Sound knowledge of food safety legislation and HACCP procedures.
- Excellent communication skills and a collaborative approach to teamwork.
- Reliable, professional, and committed to maintaining exceptional standards.
