Castle Street is a brand-new hospitality venue built around exceptional drinks, atmosphere, and guest experience. Our bar programme is rooted in creativity, quality ingredients, modern cocktail culture, and genuine hospitality. We are building a team of passionate bartenders and mixologists who take pride in their craft and want to help shape a standout drinks destination from day one. Within Castle Street will be The Parlour, a place where coffee and cocktails meet.
Role Overview
We are looking for a talented, creative, and hospitality-driven Mixologist / Bartender to join the opening team at Castle Street. This is a mixology-led role with a strong emphasis on cocktail craftsmanship, premium spirits, innovation, and elevated guest experiences.
The ideal candidate will have a genuine passion for modern cocktail culture, flavour pairing, presentation, and high-end service. You should be confident creating exceptional classic and signature cocktails while contributing fresh ideas to the development of Castle Street’s drinks identity.

Key ResponsibilitiesCocktail & Beverage Service
- Prepare and serve exceptional cocktails with a strong focus on premium presentation, consistency, and flavour balance.
- Demonstrate advanced knowledge of classic cocktails, modern mixology techniques, premium spirits, syrups, infusions, and garnishing.
- Contribute creatively to the development of signature cocktails, seasonal menus, and unique drink concepts.
- Stay up to date with cocktail trends, spirit categories, and evolving bar techniques.
- Deliver an elevated cocktail experience through attention to detail, theatre, and guest interaction.
- Confidently recommend cocktails, spirit pairings, and bespoke drink options tailored to guest preferences.
- Maintain speed and precision during high-volume service without compromising quality.
- Ensure all drinks leaving the bar reflect the Castle Street brand and standards.
Guest Experience
- Deliver warm, engaging, and professional customer service at all times.
- Build rapport with guests and create a welcoming, energetic bar atmosphere.
- Handle customer requests, feedback, and complaints professionally and positively.
- Contribute to a premium hospitality experience that encourages repeat business and strong word-of-mouth reputation.
Bar Operations
- Maintain cleanliness, organisation, and presentation of the bar area throughout service.
- Support stock control, inventory checks, and rotation of products.
- Prepare garnishes, syrups, infusions, fresh ingredients, and mise en place for service.
- Ensure compliance with licensing laws, food safety standards, and health & safety procedures.
- Monitor stock levels and communicate shortages or ordering requirements to management.
- Assist with opening and closing procedures.
Team & Culture
- Work collaboratively with management and floor staff
- Bring a positive attitude and strong work ethic to every shift.
- Contribute ideas for improving the drinks programme and guest experience.
- Help establish Castle Street as a recognised destination venue for cocktails, coffee and nightlife.
Skills & ExperienceEssential
- Previous experience as a bartender or mixologist in a quality bar, restaurant, or hospitality venue.
- Strong cocktail knowledge and confidence with classic and contemporary drinks.
- Excellent communication and customer service skills.
- Ability to work effectively under pressure in a fast-paced environment.
- Professional appearance and positive attitude.
- Good understanding of responsible alcohol service.
- Flexible availability, including evenings and weekends.
Desirable
- Experience in premium cocktail bars or venue openings.
- Passion for cocktail innovation, mixology techniques, and premium spirits.
- Knowledge of wine, agave spirits, whisky, rum, or other specialist categories.
- Flair bartending or advanced cocktail preparation techniques.
- WSET, bar school, or hospitality qualifications.

Pay: £13.00-£15.00 per hour
