Kiwi-inspired brunch by day, live fire by night. We're after a chef who can own brunch service and get the best out of a small, sharp kitchen team.
About The Bach
For around ten years we've been serving a Kiwi-inspired brunch in the heart of Dundee — proper coffee, big plates, and a warm welcome. Five days a week it's brunch; evenings, we cook over live fire on our Kanaku service. Weekends are our Everest: full room, fast tickets, no dropped standards. Our Head Chef is the owner, and the kitchen whānau is tight, capable, and proud of what goes out the pass.
The role
You'll own brunch service — set the pace, hold the line on quality, and keep plates moving when every table's turning. This is a hands-on leadership role for someone who runs a section and runs a room, and who wants to make the kitchen better over time, not just survive the rush.

**You can organise and run a sharp brunch service — weekends included — while holding both quality and speed at once.
** Not quality or speed depending on how busy it gets. Both, together, every service. If that's your natural mode, read on.
You'll thrive here if you
**Are ferociously well organised** — mise, prep, and pass all set up so service runs itself.
**Solve problems mid-service** — a supplier's short, a fridge is down, two chefs called in sick, and the room's still full. You find a way and keep it calm.
**Lead the team day to day** — you get the best out of people, read the section, and delegate so the whole line lifts, not just your own plates.
**Grow the people around you** — you bring on new starters and sharpen experienced hands, so the kitchen gets stronger whether you're on shift or not.
**Tune the system** — you spot where prep, flow, kit, or the menu could work better, and you'll happily thrash it out with the team and owners rather than just grumbling about it.
Goes without saying
**Keep us compliant** — the kitchen, back-of-house, and all associated activities stay clean, safe, and ready to pass any EHO check, any day, unannounced.
**Work well across the whole building** — front of house, suppliers, owners. You make other people's jobs easier, not harder.
**Cover others** — when needed, you're able to cover other team members on leave, or the Kanaku service from time to time.
About you
- You may be an experienced operator looking for a new kitchen, or
- You may be a chef used to cooking through busy services, but now looking to take the next step in your career by leading a team to run a successful brunch service.

- Hourly rate to match experience, skills and performance.
- Five days a week, currently Thu-Mon, but may change as the business needs change.

Pay: £12.50-£17.50 per hour
