Job Summary
The Butchery Manager will oversee the daily operations of our independent shop with a reputation for exceptional quality and service within the local community. From our long-established shop in Southborough, Tunbridge Wells, we provide high-quality meat products to businesses and the public. We also offer a hog roast service; the manager will have to manage the running of the shop as well these bookings. Boasting more than 100 years of experience between our staff and offering a friendly, helpful service, we sell prime cuts of fresh, high-quality meats.
This is a hands-on management role where the candidate will be overseeing a busy butchery counter, managing a skilled team, and providing a quality customer experience. They will balance expert meat-cutting and customer service with business administration, including managing staff schedules, supply contracts, controlling inventory, maintaining food hygiene standards, and maximising profitability.
Responsibilities
- Oversee the daily operations of the butchery department, ensuring efficient workflow and high standards of quality.
- Stock & Supply -The individual will possess the ability to track supply levels, order fresh meat, handle stock rotation, minimise waste, and conduct stocktakes.
- Team Management -Manage the butchery team, oversee staff schedules, provide training to new employees, and continue professional develop for existing staff members. Ensure full compliance with food hygiene and health and safety standards and ensure that they are kept of paramount importance. Lead, train, and supervise butchery staff to maintain consistency in product preparation and presentation.
- Quality & Display - Maintain the highest standards of quality, presentation of our cuts. Prepare and cut the meat to order, and maintaining attractive, high-quality counter displays.
- Profitability -The candidate will possess the ability to forecast sales, manage budgets, track gross margins, setting prices to achieve targeted product and wage margins, and developing business plans to increase sales and control waste.
- Maintaining Equipment -Cleaning and maintaining tools and equipment and managing their service requirements and schedules.
- Customer Invoicing – writing sales invoices when office lady is on holiday / has her day off
- Customer Service: Provide excellent service to our customers. Collaborate with suppliers to source quality meat products at competitive prices. Maintain cleanliness and organisation of the work environment to meet hygiene standards. Provide excellent customer service by offering expert advice on meat cuts and cooking methods when required.
Requirements
- At least 10 years’ experience managing a busy Butchery in a practical retail setting or wholesale Butchery
- Proven ability to work under pressure
- Deep product knowledge
- Full UK Driving License
- Strict Food Safety Certifications HACCP (Hazard Analysis and Critical Control Point)
- Level 3 or 4 Award in Food Safety and Hygiene
- Strong Leadership skills backed by strong organisational skills and communication ability.
- Proven experience in food production, particularly within butchery or meat processing environments.
- Culinary experience or background in restaurant or kitchen settings is highly desirable.
- Previous management experience within a retail or hospitality setting is preferred.
- Excellent organisational skills with the ability to lead a team effectively.
- Good communication skills and a customer-focused approach.
Relevant qualifications or certifications in food safety or butchery are advantageous.
Pay: £35,000.00-£40,000.00 per year
