Full job description

We are seeking a highly skilled and passionate full-time Head Baker to join our production team at our bakery in Leith. We take immense pride in our baked goods, using locally sourced, organic and seasonal ingredients where possible.

This role is specifically designed for a cake-focused baker and decorator. While your primary role will be cake baking and decorating, experience in lamination and viennoiserie is highly desirable. We also make our own ice cream and sorbets for the cafe.

Key Responsibilities

Lead the production of a diverse range of cakes and baked goods, ensuring consistency in taste presentation.
Training, organising and managing the team.
Execute intricate decorating tasks with a keen eye for detail and aesthetic appeal.
Collaborate with the team to develop new, innovative recipes and seasonal offerings.
Maintain rigorous standards of food safety, hygiene, and kitchen organisation.
Contribute to the efficient daily operations of a high-volume production bakery.

Candidate Requirements

Experience: A minimum of 2 years of professional experience in a high-quality bakery environment.
Technical Skills: Comprehensive knowledge of baking processes and decorating styles. Prior experience with laminated doughs and viennoiserie is a preferred bonus.

Schedule

Hours: Approximately 45 hours per week, scheduled over 5 days (the bakery operates 7 days a week).
Holiday: 28 days of annual leave.
