About the Role

Kaiten Japanese Dining and Hospitality UK Ltd is looking for an organised, detail-focused and quality-driven Food Safety and Quality Coordinator to support high standards of food hygiene, product quality and operational compliance across its restaurant operations.

The successful candidate will monitor food-safety procedures, review kitchen and storage practices, maintain compliance records, support staff training and help ensure that ingredients and prepared dishes are handled consistently and safely.

Working closely with kitchen teams, restaurant supervisors, procurement staff and suppliers, the coordinator will help maintain reliable standards across food preparation, storage, temperature control, allergen management and customer-facing service.

This role is suitable for a hospitality or food-quality professional with practical experience in food safety, quality assurance or restaurant operations who is ready to take greater ownership of compliance and quality-control activities.

Key Responsibilities

Monitor day-to-day food-safety and quality procedures
Support implementation of food-safety management systems
Maintain food hygiene and quality-control documentation
Review kitchen preparation and storage practices
Conduct regular hygiene and cleanliness checks
Monitor refrigeration and freezer temperatures
Review hot-holding and chilled-food controls
Maintain accurate temperature-monitoring records
Check food-delivery temperatures and condition
Verify that ingredients are stored correctly
Monitor use-by and best-before dates
Support stock rotation using FIFO principles
Check labelling and date-coding practices
Monitor raw and ready-to-eat food separation
Support prevention of cross-contamination
Review cleaning and sanitising procedures
Monitor handwashing and personal-hygiene standards
Conduct routine kitchen and storage-area inspections
Record non-conformities and required corrective actions
Follow up on outstanding food-safety issues
Escalate significant concerns to restaurant management
Maintain allergen information for menu items
Verify that allergen records remain accurate
Support allergen-awareness procedures
Review ingredient changes that may affect allergen information
Assist staff with customer allergen enquiries
Monitor preparation of sushi and other high-risk foods
Support safe handling of fish, seafood and raw ingredients
Check thawing, preparation and storage procedures
Monitor buffet and conveyor-belt food-display practices
Review time and temperature controls for displayed food
Conduct quality checks on finished dishes
Monitor consistency in presentation and portion standards
Review customer feedback relating to food quality
Investigate recurring complaints or quality concerns
Support investigations into suspected food-safety incidents
Maintain records of corrective and preventive actions
Coordinate with suppliers regarding product-quality issues
Check supplier documentation and product specifications
Support approved-supplier monitoring
Review food deliveries for quality and specification compliance
Assist with supplier performance reviews
Support traceability and product-recall procedures
Maintain records for ingredients and batch information
Assist with internal food-safety audits
Prepare documentation for external inspections
Support restaurant teams during environmental-health visits
Develop and update food-safety checklists
Support staff training and refresher sessions
Promote continuous improvement in food-quality standards

Qualifications and Experience

Degree, diploma or professional qualification in Food Safety, Food Science, Hospitality, Catering or a related subject
At least two years of experience in food safety, quality assurance, catering or restaurant operations
Practical knowledge of food-hygiene procedures
Understanding of HACCP principles
Experience completing food-safety checks and records
Knowledge of safe food-storage practices
Understanding of temperature-control requirements
Familiarity with allergen-management procedures
Experience identifying and recording non-conformities
Strong attention to detail
Good analytical and problem-solving skills
Ability to maintain accurate compliance documentation
Strong organisational and time-management skills
Ability to manage multiple tasks and deadlines
Confidence communicating with kitchen and restaurant teams
Strong written and verbal English-language skills
Ability to explain food-safety requirements clearly
Good knowledge of Microsoft Word, Excel and Outlook
Ability to work effectively in a busy restaurant environment
Willingness to work occasional evenings or weekends when required
Right to work in the United Kingdom

Preferred Experience

Level 3 Food Safety qualification or equivalent
HACCP certification
Experience in Japanese, Asian or seafood-focused restaurants
Knowledge of sushi preparation and raw-fish handling
Experience with buffet or self-service food operations
Familiarity with UK Food Standards Agency guidance
Knowledge of food-allergen legislation
Experience supporting environmental-health inspections
Familiarity with food-safety auditing
Experience in supplier-quality management
Knowledge of traceability and recall procedures
Experience with restaurant quality-management systems
Familiarity with stock-control and inventory processes
Experience delivering food-safety training
Knowledge of cleaning-chemical and sanitation controls

Pay: £26,000.00-£36,000.00 per year
