Role summary:
To plan and provide well balanced and nutritious meals for Stallcombe House and Willows Provide support to residents with activities based in the kitchen.
2 days a week and then also alternate weekends.
Main Duties and Responsibilities
- To positively promote and follow the ethos and philosophy of Stallcombe House when carrying out all aspects of the role.
Residents
- Ensure the health, safety and wellbeing of residents at all times.
- Ensure the highest standard of care whilst residents are in the kitchen.
- Provide a stimulating, therapeutic and safe environment for residents ensuring their goals are being met by the activities provided in the kitchen.
- Monitor residents’ feedback and adapt menus where appropriate.
Kitchen
- Responsible for the day-to-day running of the kitchen.
- Ensure the highest standards of hygiene and cleanliness are maintained at all times within the kitchen and food storage areas, adhering to the safer food better business guidelines.
- Ensure an up-to-date knowledge of food hygiene standards and all statutory and regulatory guidance in relation to the food preparation and storage. Ensure this knowledge is applied at all times.
- Plan and produce nutritious and well-balanced meals to meet the needs of residents.
- Overall responsibility for ensuring the meals meet the medical and/or dietary requirements of the residents e.g. a soft diet.
- Promote choice and variety across the planning and delivery of menu choices.
- Responsible for managing food stocks ensuring minimum food waste
- Ensure food is prepared appropriately and within Food Standards guidelines.
- Liaise closely with the garden team to plan the requirements of the kitchen.
- Responsible for overseeing the induction plan for agency kitchen staff or staff covering if required.
- Ensure deliveries are checked and stored correctly
- Maintain accurate temperature records, cleaning schedules, and food safety documentation.
- Lead by example in maintaining cleanliness and organisation in the kitchen.
Health and Safety
- Ensure the kitchens are compliant with Health and Safety guidance at all times.
- Responsible for ensuring that the buildings and equipment used in the kitchen are properly maintained and fit for purpose. Reporting any faults in a timely manner through the correct reporting procedures.
- Proactively manage the identification of risk and ensure any risks are managed appropriately.
- Follow COSHH and manual handling guidelines
- Complete all paperwork associated with the running of the kitchen
Finances
- Overall responsibility for sourcing and purchasing all ingredients and kitchen equipment within the agreed budget. Working along side admin support to ensure kitchen supply orders are completed
- Responsible for purchasing equipment and supplies for the kitchen budget via the correct purchase order procedure
- Responsible for liaising with the finance team regarding invoices and paperwork related to the kitchen
- Manage supplier contracts, ensuring best value at all times.
Other Duties
- Plan, prepare and provide food for adhoc events e.g. bonfire night, Board meetings, celebrations etc
- Attend meetings as required.
- Any other duties as required.
Skills, Qualifications, Knowledge and Experience
The post holder must have the following: -
· Experience of producing menus, stock control and managing budgets.
· Recognised catering qualification or equivalent work experience.
· Up to date food hygiene certification.
· Understanding and/or experience of working with adults with learning disabilities.
· Excellent organisation skills.
· Excellent interpersonal skills
·
It would be advantageous for the job holder to have the following: -
· Experience of supporting adults with learning disabilities.
· Experience of working as a chef in a similar environment.
· Experience of cooking specialised diets.
