Rossall School seeks a dedicated Chef de Partie to join our busy Catering department.
Job Purpose
To assist with the preparation of food in accordance with recipes and food safety standards adhered to by Rossall Catering.
To provide the highest standard of meals to Rossall students, staff and visitors.
Main Responsibilities
- To work to Rossall Catering guidelines, to follow instructions to ensure high standards of food production and presentation, including portion and quality control.
- To consistently improve themselves and their team members to ensure constant growth and development.
- To follow all food safety and sanitation standards in the kitchen in compliance with Sanitation Standards and HACCP protocols.
- To perform all duties assigned efficiently, technically correct, and following the Rossall Catering policy, school rules and regulations, and orders of Superiors.
- Adhere to procedures of the training manual and achieving a high standard leading to total customer satisfaction.
- To communicate with the Head Chef, Senior Sous Chef and Sous Chef in a respectful, friendly and professional way.
- To ensure, for every upcoming service, the menu is served as hot and fresh as possible.
- To be aware of levels of production throughout service and ensure sufficient food is produced.
- Advise and guide Assistant Chefs with preparation, with particular focus on the cooking time of different items.
- To ensure all machines and equipment are kept in good repair and notify direct supervisor of any requirements.
- To ensure all Catering personnel are familiar with the handling and cleaning procedures of the respective Kitchen equipment.
- To work with subordinates and lead them successfully into productive working methods by setting an example in professional and disciplinary habits.
- To provide a two way line of communication with all staff members.
- To assist all new kitchen team members in understanding their duties and ensure they are integrated into the kitchen team.
- To ensure that standards are held and team members work according to their respective job descriptions.
- Day to day cleaning of kitchen in accordance with Rossall catering standards.
- Practice good workplace standards and enforce the principles of HACCP/EHO.
- Check the kitchen before the start of each shift, using and completing the appropriate checklist.
- Maintain a clean, sanitised working environment.
- Minimise food spoilage and utilise food surpluses
- Discard any potentially hazardous items of food that do not comply with Rossall Catering/EHO requirements.
- Comply with personal hygiene requirements. (Appropriate use of head covering, no (or covered) facial hair, no uncovered injuries, no cigarettes or mobile phones on duty, no eating or drinking in the kitchen).
- Use only surplus foods that are tested to be safe and free from any possibility of contamination or bacteriological degradation.
The successful candidate will have experience working as a Chef de Partie or in a similar role and be in possession of a professional cookery qualification, such as an NVQ 2, NVQ 3 or equivalent.
The position is four days a week, term time only plus up to 6 weeks during the summer. The normal hours of work are 26 per week, to include weekends.
The current salary is £12,840 per annum for the four days during term time. Summer and other work is paid as overtime.
