The Bakers Arms is being reimagined as an exciting new destination restaurant in the heart of Leicestershire.
Under new ownership, we are creating a refined yet welcoming restaurant focused on exceptional food, outstanding wines, genuine hospitality and memorable guest experiences. Our aim is to combine the standards of fine dining with the warmth and character of a great country restaurant.
Guests can expect a carefully curated wine programme, seasonal tasting menus, classic hospitality and a drinks offering built around exceptional wines, premium spirits, carefully crafted cocktails and quality coffee.
We are now seeking a passionate, professional and ambitious Assistant Manager / Head Bartender to join our opening front of house team.
The Role
This is a key leadership position within the business and an exciting opportunity to join our opening team.
Working directly alongside the General Manager, you will take ownership of the bar and play a significant role in shaping the guest experience, beverage offering and culture of the business.
You will be primarily responsible for the development and evolution of our cocktail programme, taking the lead on cocktail creation whilst working collaboratively with the General Manager to ensure the drinks offering reflects the vision and standards of The Bakers Arms.
You will also play a significant role in shaping the wider bar beverage programme, including spirits, beers, non-alcoholic drinks and coffee. This is a genuine opportunity to influence the direction of the business from day one and help create a drinks offering that is both distinctive and commercially successful.
Alongside your bar responsibilities, you will support the General Manager with a range of operational and administrative duties, helping to ensure the smooth day-to-day running of the business. As the restaurant grows, you will have the opportunity to develop your management responsibilities and play an increasingly influential role within the front of house team.
The wine programme will be led separately by the General Manager and Sommelier, allowing you to focus on developing and delivering an exceptional bar experience whilst having the opportunity to expand your wine knowledge through ongoing training and exposure.
You will also have the opportunity to develop your wine knowledge under the guidance of a Sommelier with experience in Michelin-starred restaurants and luxury hotels.
Reporting directly to the General Manager, you will play an important role in helping to shape the culture, standards and success of The Bakers Arms from day one.
Responsibilities
- Take ownership of the day-to-day operation, organisation and presentation of the bar
- Lead the development, implementation and ongoing evolution of seasonal cocktail menus
- Work collaboratively with the General Manager to shape the bar beverage programme, including spirits, beers, coffee and non-alcoholic drinks
- Prepare and serve cocktails, wines, spirits, beers and non-alcoholic beverages to a consistently high standard
- Ensure all cocktails and beverages are delivered consistently and to specification
- Deliver warm, professional and knowledgeable service to all guests
- Assist the General Manager with stock management, ordering and supplier relationships
- Monitor stock levels, wastage and profitability within the bar operation
- Train and develop bartenders and front of house team members in drinks knowledge and service standards
- Support the management of front of house service and act as a senior point of contact during service
- Assist with administrative and organisational duties as required by the business
- Support recruitment, onboarding and training of team members
- Maintain exceptional standards of cleanliness, organisation and professionalism
- Deliver outstanding guest experiences and handle guest feedback professionally
- Support colleagues across the restaurant, recognising that exceptional hospitality is achieved through teamwork
What We're Looking For
- Previous experience as a senior bartender, bar supervisor, assistant manager or similar role
- Strong knowledge of classic cocktails is essential
- Experience developing cocktail menus is highly desirable
- A passion for hospitality, drinks and guest experience
- Confidence leading and motivating a team
- Strong organisational and communication skills
- Understanding of stock control, ordering and cost management
- Wine knowledge is advantageous but not essential, as training will be provided
- A creative mindset and enthusiasm for developing new drinks
- The ability to remain calm and organised in a busy environment
- A desire to learn, develop and progress within a quality-focused restaurant
