Coffee Koub is a growing independent specialty coffee shop in Morriston, Swansea, and we’re looking for a Baker to join our team and help us develop our in-house bakery offering.
The main focus of the role will be producing fresh, high-quality bagels from scratch for our café, with the opportunity to expand production into other baked goods as we grow.
The Role
You’ll be responsible for:
- Making fresh bagels from scratch, including mixing, kneading, proofing, shaping, boiling and baking.
- Producing bagels consistently to our agreed recipe, size and quality.
- Planning production quantities based on café demand and reducing unnecessary waste.
- Preparing dough efficiently and managing proofing and production schedules.
- Maintaining excellent food hygiene, cleanliness and food-safety standards.
- Managing ingredients correctly, including stock rotation and storage.
- Helping develop and test new bagel flavours and recipes.
- Working with the Coffee Koub team to improve our bakery range and production processes.
As the bakery side of Coffee Koub develops, there may also be opportunities to produce pastries, cinnamon buns, brownies, cookies, breads and other sweet or savoury bakes.
Who We’re Looking For
Ideally, you will:
- Have previous professional baking or bakery experience.
- Be confident working with yeasted dough and understanding fermentation and proofing.
- Have experience making bagels or artisan bread, although specific bagel training can be considered for the right baker.
- Be able to work independently and organise your own production.
- Have strong attention to consistency, portioning and presentation.
- Understand food hygiene, allergens and safe food handling.
- Be reliable, organised and passionate about producing genuinely good food.
About Coffee Koub
Coffee Koub is an independent specialty coffee shop based in Morriston. Alongside specialty coffee, we’re developing our food offering around freshly prepared bagels, quality bakes and locally sourced products.
We want to bring more of our production in-house, starting with our own signature bagels, and we’re looking for someone who would like to play an important role in building that side of the business.
There is potential for the role to grow as production increases, including producing for Coffee Koub as well as potentially supplying other cafés and businesses in the future.
