Full job description

About the Role

We are looking for an experienced Sushi Chef to join our kitchen team. You will be responsible for preparing high‑quality sushi, maintaining excellent food safety standards, and ensuring consistency across all menu items. This role requires precision, speed, and strong attention to detail.

Key Responsibilities

Prepare and roll sushi to company standards (maki, uramaki, nigiri, sashimi)
Follow recipes, portion sizes, and presentation guidelines
Cook and season sushi rice correctly and consistently
Prepare fresh ingredients daily (fish, vegetables, sauces, garnishes)
Maintain strict hygiene, allergen, and cross‑contamination controls
Ensure correct storage, labelling, and rotation of all ingredients (FIFO)
Keep workstation clean, organised, and fully stocked
Support the Head Chef and kitchen team during busy service
Monitor product quality and report any issues immediately
Assist with stock checks and prep lists

Requirements

Previous experience as a Sushi Chef or in a Japanese kitchen
Strong knife skills and understanding of sushi preparation
Knowledge of food safety, allergens, and HACCP procedures
Ability to work efficiently in a fast‑paced environment
Excellent attention to detail and presentation
Good communication and teamwork skills
Flexibility to work evenings, weekends, and holidays
