Duties
- Prepare various cuts of meat, including beef, pork, lamb, and poultry, according to specifications.
- Ensure all meat products are processed in compwith food safety regulations and standards.
- Maintain cleanliness and organisation of th safely and effectively.
- Collaborate with kitchen staff to fulfil orders and ensure timely food production.
- Assist in inventory management by tracking stock levels and reporting shortages.
- Provide excellent customer service by answering queries regarding meat products and preparation methods.
Qualifications
- Proven experience as a Butcher or in a similar role within a restaurant or kitchen environment.
- Strong knowledge of food preparation techniques and food safety practices.
- Familiarity with various cuts of meat and their culinary uses.
- Excellent knife skills and attention to detail.
- Ability to work efficiently in a fast-paced environment while maintaining high standards of quality.
- Good communication skills and the ability to work as part of a team.
- A culinary qualification or relevant training is an advantage but not essential.

The ideal candidate will have a proven track record of increasing sales, improving profitability, and delivering exceptional customer service while maintaining the highest standards of product quality, food safety, and team performance.
Key Responsibilities
- Manage the day-to-day operations of the butchery department.
- Prepare and oversee the preparation of beef, lamb, pork, poultry, and value-added products to the highest standards.
- Drive sales growth and improve gross profit through effective merchandising, promotions, and stock management.
- Lead, train, and motivate the butchery team to achieve business objectives.
- Maintain excellent standards of food safety, hygiene, and compliance.
- Manage stock levels, ordering, wastage, and margin control.
- Deliver outstanding customer service and product knowledge.
- Ensure the department is presented to the highest standards at all times.
Essential Requirements
- Proven experience as a Butcher Manager or Senior Butcher.
- Demonstrable history of increasing trade, sales, and profits.
- Strong leadership and team management skills.
- Excellent knowledge of meat preparation, cutting techniques, and product presentation.
- Thorough understanding of food safety and HACCP procedures.
- Ability to work in a fast-paced retail environment.
- Strong commercial awareness and stock control experience.
