Job Overview
Fossil House is looking for a talented, experienced, Sous Chef / Head Chef to join our busy seaside restaurant.
We are a small qiuet kitchen but.. during season things get BUSY — so we need somebody who can handle pressure, stay organised, cook consistently good food, and not panic when 15 tickets arrive at once.
You must be confident working across all sections and capable of running the kitchen solo when required.
This role would suit somebody who genuinely enjoys hospitality, works clean, takes pride in their food, and understands that a good kitchen runs on teamwork, communication, and occasionally caffeine and sarcasm.
Duties & Responsibilities
- Prepare and cook dishes to high standards during breakfast, lunch, and dinner service
- Work confidently across all kitchen sections
- Run kitchen service independently when required
- Maintain excellent cleanliness and organisation standards at all times
- Ensure all food safety and hygiene regulations are followed
- Assist with stock control, prep, and ordering
- Work closely with front-of-house staff to ensure smooth service
- Help maintain a positive and professional kitchen environment
- Stay calm and efficient during very busy periods
Skills & Experience Required
- Previous chef experience required
- Experience in a busy restaurant kitchen is essential
- Ability to work independently and manage service solo
- Excellent organisational and multitasking skills
- Strong understanding of food safety and kitchen hygiene
- Reliable, hardworking, and punctual
- Positive attitude and good sense of humour preferred — shouting at the fryer does not count as communication
