Following the success of our Edinburgh restaurant, KOCHCHI Glasgow has quickly established itself as one of the city’s most exciting independent restaurant openings and we are now looking for an exceptional General Manager to help lead the business into its next stage of growth.
This is not a corporate hospitality role.
We are looking for a commercially minded operator with energy, leadership presence and ambition. Someone who thrives in fast-paced independent restaurants, leads from the front, builds strong teams and understands how to balance guest experience with operational performance.

The Role
As General Manager, you will oversee the full day-to-day operation of KOCHCHI Glasgow, leading both front-of-house management and wider restaurant operations.
You will be responsible for:
- driving service standards

- controlling labour performance
- improving operational efficiency

- delivering exceptional guest experiences consistently
You will work closely with the Directors and Executive Chef while having genuine operational autonomy and accountability.
This is a hands-on leadership role for someone who wants to make a genuine impact within a growing independent business.
Key ResponsibilitiesOperations & Service
- Lead daily restaurant operations to ensure smooth, energetic and efficient service
- Deliver exceptional guest experiences and maintain consistently high standards
- Oversee opening and closing procedures, cash handling and operational compliance
- Resolve guest feedback professionally and proactively
- Ensure restaurant presentation, atmosphere and cleanliness are maintained at all times
Team Leadership
- Recruit, train and develop a strong front-of-house team
- Build a positive, professional and accountable team culture
- Lead from the front during busy services and high-pressure periods
- Manage rotas, staffing levels and labour costs effectively
- Conduct team briefings, performance reviews and disciplinary procedures where required
Financial & Commercial Performance
- Drive revenue growth and operational profitability
- Monitor labour percentages, wage spend and service efficiency
- Support stock control, wastage management and cost reduction initiatives
- Work towards agreed business KPIs and performance targets
- Contribute ideas for growth, partnerships, events and guest engagement
Compliance & Standards
- Ensure full compliance with food safety, licensing and health & safety procedures
- Maintain company policies and operational systems consistently
- Support onboarding, training and development procedures across the business
About You
We are looking for someone who:
- Has previous experience as a General Manager or senior restaurant manager within a high-volume hospitality environment
- Is calm, organised and solution-focused under pressure
- Leads with professionalism, energy and emotional intelligence
- Understands both guest experience and commercial performance
- Is hands-on, proactive and highly accountable
- Can motivate, develop and retain strong teams
- Has strong understanding of labour management, rotas and operational controls
- Wants to grow with an ambitious independent hospitality brand
- Has the mentality of an operator, not just a manager

Salary & Benefits
- Base salary of £35,000–£40,000 depending on experience
