We are open to applicants who specialise in one area, such as housekeeping, food service or kitchen porter work, as well as all-rounders or couples who can support across several areas of the estate.
Overview
Kilchoan, by Dunton, is opening this summer on the Knoydart Peninsula, one of Scotland’s most remote and beautiful locations. This is a rare opportunity to be part of the opening team for a unique private estate, helping to shape the guest experience from the very beginning.
We are seeking practical, reliable and genuinely service-minded Estate Hospitality Assistants to support the day-to-day running of guest stays across housekeeping, food and beverage service, kitchen porter duties and general estate hospitality.
As a small and remote estate, Kilchoan will not have a large team, so every role matters. We are looking for people who are not only good at what they do, but who bring the right attitude, flexibility and care to a close-knit environment. Depending on experience and operational requirements, the role may focus mainly on housekeeping, food and beverage service, kitchen support, or a combination of these areas.
This is a hands-on role suited to someone who enjoys variety, takes pride in high standards, and is happy to be part of a small team where everyone helps where needed. The role would suit individuals or potentially a couple who are comfortable living and working in a remote estate environment and who enjoy delivering warm, thoughtful and discreet hospitality.
Key Responsibilities
Housekeeping & Estate Presentation
- Clean and prepare guest bedrooms, bathrooms, lodges, public areas and back-of-house spaces to a consistently high standard
- Support daily housekeeping service, room refreshes, turndown service and departure cleans as required
- Make beds, manage linen, towels, amenities and guest supplies with care and attention to detail
- Report maintenance issues, breakages, damage or low stock promptly
- Assist with laundry handling, stock rotation and storage areas
- Ensure guest-facing areas are tidy, welcoming and well presented at all times
- Support the Head Housekeeper and wider team in maintaining the overall presentation of the estate
Food & Beverage Service
- Assist with service of dinner and drinks in our beautifully designed Long House, as well as occasional private dining or events
- Prepare dining areas, set tables, polish glassware and cutlery, and ensure service areas are ready for guests
- Deliver warm, attentive and relaxed service in keeping with the style of the estate
- Serve food and drinks confidently and professionally, including explaining dishes and assisting with guest requests
- Support drinks service where appropriate and in line with licensing requirements
- Clear tables, reset spaces and maintain cleanliness throughout service
- Assist with guest hampers, packed lunches, refreshments and activity-related food and drink requirements
Kitchen Porter & Kitchen Support
- Wash dishes, pans, utensils, glassware and kitchen equipment efficiently and hygienically
- Keep kitchen areas, wash-up areas, bins and storage spaces clean, safe and organised
- Assist with basic food preparation where required and appropriate
- Support the Chef and kitchen team during service and preparation periods
- Help receive, store and rotate deliveries in line with food safety standards
- Follow all cleaning schedules, hygiene procedures and food safety requirements
Guest Support & General Estate Hospitality
- Assist with guest arrivals, departures, luggage handling and welcome preparation when required
- Support the wider team with guest requests, refreshments, activities and daily estate operations
- Help prepare areas for guest experiences, informal gatherings, outdoor activities or special occasions
- Work closely with the General Manager, Head Housekeeper, Chef and wider estate team to ensure guest stays run smoothly
- Respond flexibly to changing priorities and guest needs
- Maintain high standards of confidentiality, discretion and professionalism at all times
Skills & Experience
- Previous experience in housekeeping, hospitality, food and beverage service, kitchen porter work, or a similar hands-on role is desirable
- A positive, practical attitude and willingness to help across different areas of the operation
- Strong attention to detail and pride in maintaining high standards
- Good communication skills and a naturally helpful manner
- Ability to work independently as well as part of a small team
- Comfortable working in a remote, rural environment
- Reliable, punctual and physically able to carry out practical hospitality duties
- Understanding of hygiene, food safety and health and safety standards is desirable
- Full UK driving licence is essential for most roles
Working Conditions
- Full-time, seasonal or flexible positions available depending on operational requirements
- Hours to be agreed in line with the Working Time Regulations 1998
- Flexibility will be required depending on guest schedules, arrivals, departures and estate requirements
- This is an on-site role based on the Knoydart Peninsula
- Due to the remote nature of the estate, suitable accommodation may be available by separate arrangement, subject to discussion and operational requirements
