We are seeking a talented and passionate Senior Pastry Chef de Partie to join Executive Head Chef Dave, our dedicated brigade and our growing pastry team.
Working alongside our existing Pastry Chef, you will play an important role in delivering exceptional desserts, pastries and Afternoon Tea experiences that help create memorable and iconic dining experiences for our guests. About the Role
As Senior Pastry Chef de Partie, you will work closely with our existing Pastry Chef and wider brigade to produce exceptional desserts, pastries, breads and sweet treats across our dining experiences.
Together, you will contribute to the development of seasonal menus, elevate our Afternoon Tea offering and ensure consistently exceptional standards of quality and presentation.

Key Responsibilities
- Work alongside the Pastry Chef to deliver exceptional desserts, pastries and baked goods across all dining experiences.
- Prepare and present pastry items to consistently high standards of quality and presentation.
- Support the development of seasonal dessert menus and Afternoon Tea offerings.
- Assist with the creation of new pastry concepts, guest experiences and menu innovation.
- Ensure consistency, quality and attention to detail in every dish produced.
- Maintain excellent organisation, stock rotation and mise en place within the pastry section.
- Support the smooth day-to-day operation of the pastry section during service and preparation periods.
- Uphold the highest standards of food safety, hygiene, cleanliness and compliance.
- Work collaboratively with the wider kitchen brigade to support operational success.
- Support the coaching and development of junior chefs and apprentices where appropriate.
- Champion continuous improvement, creativity and professionalism throughout the pastry operation.
What We're Looking For
- Previous experience as a Pastry Chef de Partie, Senior Chef de Partie or similar role within a quality hotel, restaurant or hospitality environment.
- Strong technical pastry skills with a passion for desserts, baking and patisserie.
- Experience producing high-quality plated desserts, pastries and Afternoon Tea offerings.
- Creativity and flair combined with excellent attention to detail.
- Strong organisational, communication and time-management skills.
- Calm and professional under pressure.
- A positive and collaborative approach to teamwork.
- Passion for hospitality and creating memorable guest experiences.
- A desire to learn, develop and contribute to an ambitious culinary operation.
Working Hours & Flexibility
- Shifts scheduled on a rota basis.
- Weekends and bank holidays form part of the working schedule.
- Due to the nature of island operations, flexibility is occasionally required to support business needs.

- Live-in accommodation may be available within our subsidised staff housing (subject to availability at the time of offer).

- Due to our remote island location, live-out applicants must have a car and valid driving licence.
- You must have the right to work in the UK. We are unable to offer visa sponsorship for this position.
