Job Summary
We are seeking a skilled and passionate Sushi Chef to join our vibrant culinary team. The ideal candidate will possess a strong understanding of traditional Japanese sushi preparation, demonstrate creativity in presentation, and maintain the highest standards of hygiene and food safety. Duties
- Prepare and assemble a variety of sushi, sashimi, and other Japanese dishes with precision and artistry
- Maintain consistency in taste, presentation, and quality across all dishes served
- Ensure all ingredients are fresh, properly stored, and used in accordance with food safety standards
- Manage the mise en place for sushi stations, including slicing fish, preparing rice, and organising ingredients
- Adhere to health and safety regulations, including strict hygiene practices and proper handling of raw fish
- Collaborate with kitchen staff to ensure smooth service during busy periods
- Keep work areas clean and organised at all times, including sanitising utensils and surfaces regularly
- Stay updated on current culinary trends related to Japanese cuisine and incorporate innovative techniques where appropriate
Skills
- Proven experience as a Sushi Chef or similar role within a professional kitchen environment
- Excellent knife skills with the ability to prepare fish and vegetables efficiently and safely
- Strong knowledge of Japanese cuisine, especially sushi preparation techniques
- Ability to work under pressure whilst maintaining attention to detail and quality standards
- Good organisational skills to manage multiple tasks simultaneously in a fast-paced setting
- Excellent communication skills and the ability to work effectively as part of a team
- Knowledge of food safety regulations and hygiene standards specific to raw seafood handling
- Creative flair for presentation and an eye for visual appeal in dish plating
