Dunalastair Hotel Suites is a five-star, 32-suite hotel in the heart of Highland Perthshire, re-opened in March 2026 following its acquisition by Loch Rannoch Estate Limited (owners/operators of neighbouring Loch Rannoch Hotel, Estate & Spa). Re-opened as part of The Rannoch Collection, the property enters an exciting new chapter after a thoughtful refresh — blending contemporary flair with whimsical nods to its Victorian sporting-lodge heritage.
We’re looking for an exceptional Food & Beverage Manager to join us and play a key role in the relaunch: setting standards, shaping culture, and building your team from the ground up.
The Role
As Food & Beverage Manager, you’ll lead a relaxed-luxury operation delivering true 5* service across:
- Breakfast, lunch, afternoon tea, dinner and room service
- A 50-cover fine dining restaurant and bar operation
- New concepts including:
- The Tipsy Stag (Bar & Lounge)
- The MacNab Restaurant (Scottish larder, produce and game)
- Al fresco dining, plus a refined cigar lounge in the Courtyard
Reporting to the Hotel General Manager, the Food & Beverage Manager role is hands-on, guest-facing and standards-led — ideal for someone who thrives in luxury environments and enjoys building high-performing teams.
Key Responsibilities
- Lead day-to-day F&B operations to consistently deliver 5* service levels
- Recruit, train and develop a new team as part of the relaunch journey
- Create and implement training programmes (service steps, standards, upselling, product knowledge)
- Drive fine dining service excellence and guest experience on the floor
- Own beverage standards across wine, cocktails and Scottish whisky (knowledge is imperative)
- Support menu and beverage development with senior leadership and kitchen team
- Maintain strong controls: stock, ordering, GP, supplier relationships and compliance
- Ensure licensing, H&S and food safety standards are met at all times
- Handle guest feedback professionally and proactively, turning issues into loyalty
About You
- Proven experience as a Food & Beverage Manager (or strong deputy ready to step up) within 5 / luxury hospitality*
- Fine dining experience at 2 Rosette level or above (or equivalent)
- Luxury country house hotel experience is ideal
- Comfortable working in a remote location and leading teams where standards and planning matter
- Strong wine knowledge: WSET Level 3 preferred (minimum Level 2)
- Confident cocktail knowledge and an eye for premium bar standards
- Scottish whisky expertise and the ability to engage guests with recommendations/tastings
- A natural leader who loves coaching, training and building a service culture
- High attention to detail, calm under pressure, and consistently professional
- Flexible to work evenings, weekends and peak periods
