The role
Fold is looking for an experienced bartender who is genuinely interested in what they pour, how it is made and the story behind it.
This is a hands-on role at the heart of our neighbourhood bistro and bottle shop. You will serve thoughtfully selected wines, quality beers and seasonal cocktails while helping guests discover something they will genuinely enjoy.
We are not looking for someone who simply wants to pull pints and follow specs. We want someone curious: a bartender who enjoys learning about producers, regions, ingredients and flavour—and can share that knowledge without making hospitality feel formal or intimidating.
You do not need to arrive knowing everything. You do need solid bar experience, confidence with classic cocktails and a real appetite to learn.

We serve internationally influenced sharing plates made with the best seasonal ingredients, alongside a carefully curated drinks programme of natural, organic and classic wines, beers and handcrafted cocktails.

What you will do
- Prepare and serve natural, organic and classic wines, quality beers and seasonal cocktails.
- Learn our drinks list in depth, including producers, regions, ingredients and flavour profiles.
- Make confident, thoughtful recommendations based on each guest’s tastes and budget.
- Deliver classic and house cocktails accurately, consistently and efficiently.
- Help develop seasonal cocktails and contribute ideas to the evolving drinks offer.
- Create a warm, relaxed bar experience that encourages conversation and discovery.
- Maintain an organised, clean and fully prepared bar and cellar.
- Support stock counts, deliveries, rotation, wastage control and product quality.
- Work closely with the kitchen and front-of-house team to create one cohesive guest experience.
- Follow licensing, food-safety and health-and-safety requirements.
What we are looking for:
- Meaningful experience working behind a quality bar.
- Sound knowledge of classic cocktails and proper bar preparation.
- The confidence to speak with guests and make personal recommendations.
- A genuine interest in wine and a desire to develop deeper product knowledge.
- High standards of cleanliness, organisation and attention to detail.
- The ability to remain warm, calm and consistent during a busy service.
- Reliable availability across Thursday to Sunday, including evenings and weekends.
- A collaborative attitude and willingness to support the wider team.
Particularly valuable
- Wine qualifications or structured drinks training.
- Experience in a wine bar, bottle shop or quality independent restaurant.
- Cocktail-development or menu-development experience.
- Cellar, ordering, stock-control or supervisory experience.
