Job Summary
Brownsover Hall Hotel is a beautiful Grade II listed Victorian Gothic manor house set within seven acres of landscaped grounds on the outskirts of Rugby. Combining historic character with modern hospitality, the hotel offers 47 bedrooms, a popular restaurant and bar, weddings, events, and conference facilities, making it a sought-after destination for both leisure and business guests.

We are looking for an experienced and driven Food & Beverage Operations Manager to lead the day-to-day operation of our food and beverage departments. This is a key leadership role within the hotel, responsible for ensuring exceptional guest experiences, driving commercial performance, and developing a high-performing team across all food and beverage outlets.
What you will be doing
As the Food & Beverage Operations Manager, you will have overall responsibility for the restaurant, bar, weddings, conferences, private dining, and all food and beverage events across the hotel.
You will lead from the front, ensuring exceptional service standards are consistently delivered whilst creating a positive and engaging environment for both guests and team members. Working closely with the Hotel Manager and Head Chef, you will oversee service delivery, labour management, stock control, guest satisfaction, compliance, and financial performance.
You will be responsible for recruiting, training, coaching, and developing your team, creating a culture of accountability, engagement, and service excellence. You will actively monitor guest feedback, implement improvements where required, and ensure operational standards are maintained across all areas.
A key part of the role will be identifying opportunities to increase revenue and profitability through effective cost control, upselling initiatives, event delivery, and maximising the potential of all food and beverage offerings.
You will also work closely with the sales and events teams to ensure weddings, conferences, and special events are executed to the highest standard, creating memorable experiences that encourage repeat business and positive reviews.
What you will bring to the team
You will have proven experience in a Food & Beverage Management role within a hotel, events, or hospitality environment, with a strong track record of leading successful teams and delivering excellent guest experiences.
You will be a confident and inspiring leader with strong organisational skills, commercial awareness, and the ability to manage multiple priorities in a fast-paced environment.
Experience managing weddings, conferences, banqueting operations, and restaurant service would be highly advantageous.
You will have a hands-on management style, excellent communication skills, and a passion for developing people and driving operational excellence.
A strong understanding of labour management, stock control, service standards, compliance, and financial performance is essential.
Flexibility to work evenings, weekends, and bank holidays as required by the needs of the business is expected.
