We take real fruit and put it in a can. No concentrates. No flavourings. No shortcuts. The result is a premium craft soda on the shelves of Gail's Bakery, Fortnum & Mason, and WatchHouse Coffee - with a major national grocery listing imminent and export markets back in our sights.
Rapscallion was built on techniques our founder absorbed working across wine, beer, and spirits in the Southern Hemisphere. That background shapes everything about how we produce: we don't brew beer and wait. We react. To the weather. To the season. To the fruit on the truck that morning. No two batches are identical and that's exactly the point.
We're a husband and wife business - lean, ambitious, and moving fast. We're already planning our first fully automated facility. This role sits right at the heart of that growth.
THE ROLE
We need a Lead Juicer who can match the founders' pace.
This is a physical, fast-moving job. You'll be on your feet all shift, lifting, moving, dialling in. You'll manage the production floor - blending, carbonation, pasteurisation, cold-side transfers, canning hand-overs - and you'll make floor decisions without needing to be told.
The standard you set is the standard the team works to. No passengers. No ego. Just good product, made properly, at pace.

WHAT YOU'LL DO
- Run production shifts end-to-end // goods-in, juicing, prepping, blending, carbonation, pasteurisation, canning
- Set the pace and hold the bar // you lead by how you work, not what you say
- Dial in carbonation, blending, and process variables on the fly // fresh produce means no two runs are the same
- Keep HACCP, food safety documentation, and QC watertight on every run
- Coach junior producers // lift the team, don't just manage it
- Spot problems early. Fix them properly. Don't let them happen twice.
- Pitch in across warehouse and dispatch at peak -- everyone mucks in when the orders pile up
WHAT "GOOD" LOOKS LIKE
Shifts run faster when you're in. Quality holds. Yields hit. The juniors copy what you do without being told. The founders don't need to check in on you on the floor.
FRESH PRODUCE REALITY CHECK
We work with real fruit. Brix levels vary. Seasons shift flavour. A warm week changes everything. You'll need to read a batch, adapt, and make the call -- and you'll enjoy that, because it's what separates this job from anything on a production line.
WHO WE'RE LOOKING FOR
You've got a background in drinks or food production -- soft drinks, kombucha, juice, wine, beer, spirits, specialty coffee -- and you're fast, disciplined, and proud of your output.
You don't need to be told twice. You don't do drama. You come in, work hard, and go home knowing you made something worth drinking.

Essential
- 3+ years' hands-on commercial production in drinks or FMCG
- Confident running a line end-to-end
- HACCP and food safety competence
- Canning or packaging line experience
- Physically capable of a demanding, active environment
- Right to work in the UK
A real bonus
- Carbonation, cold-side, or pasteurisation experience
- Background in wine, spirits, or natural/live fermentation
- Level 3 Food Safety or HACCP (we'll fund it if not)
- You've worked with fresh or raw ingredients and know how to adapt in real time
WORKING PATTERN
Standard pattern is Monday to Friday. We need flexibility -- the right candidate will be open to adjusting to Tuesday to Saturday or Sunday to Thursday as production demands. We'll always give proper notice and work around you wherever we can.
