About the Role:
We’re looking for an experienced Larder Chef Butcher with strong multi-species skills to join our fast-paced production team. You’ll play a key role in the preparation and portioning of meats (beef, lamb, pork, poultry, and game) to customer specification, supporting smooth flow from butchery through to picking and dispatch.
You’ll be working in a busy, well-equipped larder environment where attention to detail, speed, and consistency are essential. This role is ideal for someone who enjoys hands-on butchery, working with quality products, and being part of a focused, supportive team.
Key Responsibilities:
- Break down, debone, trim, and portion beef, lamb, pork, poultry, and game.
- Prepare bespoke cuts, including steaks, joints, and specialist items.
- Maintain the highest hygiene standards and follow HACCP procedures.
- Ensure accurate weighing, packing, and labelling of all products.
- Collaborate with pickers and dispatch to ensure timely and correct order fulfilment.
- Operate equipment including vacuum packers, slicers, bandsaws, and wrapping machines.
- Maintain a clean, safe, and efficient workstation at all times.
What We Are Looking For:
- Proven experience in butchery across multiple species (3+ years preferred).
- Strong knife skills and excellent attention to detail.
- Able to work efficiently under pressure while maintaining quality.
- Good knowledge of food hygiene, safety, and allergen control.
- A proactive team player who communicates clearly and supports others.
- Reliable, organised, and disciplined in approach to work.
