HOURS: Full-time including weekends 4/5 day week to be discussed at interview and dictated by business needs on a rolling basis
LOCATION: The Rabbit Hotel & Retreat, Templepatrick
PAY SCALE: Full Time Contract based on 4-5 working days including weekends & holiday periods, PAYSCALE: £34,000 - £40,000
About the role:
Reporting to the Restaurant & Bar Operations Manager, the Hunters Bar Manager will take ownership of the day-to-day operation of Hunters Bar, leading a premium bar and restaurant experience within The Rabbit Hotel. As an extension of the main restaurant, the role is responsible for delivering exceptional beverage and floor service, driving commercial performance, developing the team and creating memorable experiences for both hotel guests and our loyal local clientele.
Main Responsibilities
Operational Leadership
- Lead the daily operation of Hunters Bar, ensuring exceptional standards across both bar and restaurant floor service.
- Maintain outstanding opening, closing and service standards, including cash handling and key holder duties.
- Lead by example during service, motivating and developing the team to deliver warm, professional hospitality.
- Ensure restaurant-quality table service, food knowledge, table etiquette and guest interaction are consistently delivered.
- Maintain a safe, clean and compliant working environment in line with company and licensing standards.
Beverage & Commercial Performance
- Maintain exceptional beverage quality, presentation and recipe consistency.
- Drive beverage sales through product knowledge, premium service and upselling.
- Support the development of seasonal cocktail menus, promotions and beverage initiatives.
- Identify opportunities to grow revenue, profitability and the overall guest experience.
Stock & Supplier Management
- Take ownership of beverage ordering, stock control, stock takes and cost management.
- Monitor wastage, stock variances and product usage to maximise profitability.
- Maintain an understanding of supplier relationships and commercial opportunities.
- Build strong relationships with suppliers and sales representatives to support product development, training and promotional activity.
Team Development
- Recruit, train, coach and inspire a high-performing team.
- Ensure all team members consistently deliver company, AA and service standards.
- Foster a positive team culture built on professionalism, accountability and collaboration.
Guest Experience
- Deliver exceptional guest experiences through genuine hospitality and attention to detail.
- Build lasting relationships with our loyal local clientele, creating a welcoming environment that encourages repeat business and community engagement.
- Ensure Hunters provides a seamless food and beverage experience, reflecting the standards of the main restaurant in a relaxed, vibrant setting.
- Respond to guest feedback professionally, using insights to continually improve the Hunters experience.
Continuous Improvement
- Keep up to date with industry trends and beverage innovation.
- Work closely with the Restaurant & Bar Operations Manager and Food & Beverage Manager to enhance standards, develop the Hunters offering and drive continuous improvement.
Applicant Criteria
Essential
- Minimum four years' experience in premium bar operations, with at least two years in a leadership or management role.
- Extensive knowledge of cocktails, wines, spirits, beers and premium beverage service.
- Experience managing stock control, ordering, beverage costs and supplier relationships.
- Proven ability to lead, coach and develop high-performing teams.
- Strong commercial awareness with a passion for driving sales and delivering exceptional guest experiences.
- Experience within a premium food-led environment, demonstrating excellent table service, restaurant etiquette and food knowledge.
- Excellent organisational, communication and leadership skills.
- Flexible approach to evenings, weekends and public holidays.
Desirable
- Full UK driving license.
- WSET, Mixology or equivalent beverage qualifications.
- Experience within a luxury hotel or premium hospitality environment.
- Experience developing cocktail menus and beverage promotions.
