We’re looking for an energetic, passionate and driven Assistant / Deputy Manager to join our growing team at The Three Chimneys Smokehouse & Grill in Weymouth.
This is not a role for someone who simply wants to open and close shifts. We’re looking for someone with personality, creativity and ambition — someone who wants to help drive the business forward, deliver brilliant customer experiences, motivate the team, and play a real part in shaping one of Weymouth’s most exciting hospitality venues.
Our 150-cover restaurant has undergone a huge makeover this year and has been breaking on-site records ever since. With a bold new look, a strong food and cocktail offering, and our exciting Games Pit entertainment space, including Escape Rooms, Shuffleboard, VR Darts, Karaoke Rooms, Pool and more, we’re growing fast — and we need the right person to help us keep building momentum.
This role would suit an experienced supervisor, team leader or assistant manager who is ready for more responsibility and wants to grow with the business.

You’ll support the Restaurant Manager and wider management team with day-to-day operations, but we also want you to be involved in the bigger picture — guest experience, staff motivation, promotions, events, service standards and team culture.

You’ll be part of a supportive, people-first business based within the Jubilee Hotel, with opportunities to work alongside the hotel management team and develop your skills further across hospitality, events, customer service, team leadership and operations.
What You’ll Do
As Assistant / Deputy Manager, you will:
- Support the Restaurant Manager with the daily running of the restaurant and entertainment areas.
- Lead shifts confidently and professionally.
- Be a visible, positive and motivating presence during service.
- Help train, guide and support team members.
- Deliver excellent customer service and handle guest feedback calmly and constructively.
- Help drive sales through upselling, promotions, events and guest engagement.
- Support staff targets, competitions and incentives to keep the team motivated.
- Assist with stock control, wastage, cleanliness and presentation standards.
- Help ensure food hygiene, health and safety, licensing and service standards are maintained.
- Work closely with the kitchen, bar, reception and hotel teams to deliver a joined-up guest experience.
- Contribute ideas for menus, drinks promotions, themed nights, entertainment and social media content.
- Help build relationships with regular customers, local guests, hotel guests and groups.
- Step up when needed and take ownership of shifts, service standards and team performance.
What We’re Looking For
We’re looking for someone who has:
- Previous hospitality experience, ideally in a supervisory, team leader or assistant manager role.
- A genuine passion for hospitality, food, drinks, entertainment and customer experience.
- A positive, upbeat and confident personality.
- The ability to motivate, inspire and support a team.
- Creativity and the confidence to suggest new ideas.
- Strong communication skills and a hands-on approach.
- The ability to stay calm and professional under pressure.
- Good organisation and attention to detail.
- Confidence using tills, booking systems, EPOS or hospitality software.
- A willingness to learn, grow and take on more responsibility.

Pay, Targets and Rewards
The starting wage is £13.00 – £13.50 per hour, depending on experience.
In addition to your hourly wage, the role will include targets, bonuses and rewards linked to performance, sales, guest experience, team standards and business growth.
