About us
Brighouse Farms is a family-run Cheshire sheep farm producing high-quality, home-reared lamb throughout the year. We are developing our farm-to-restaurant business, supplying carefully prepared lamb directly to independent restaurants and chefs.
We are looking for an experienced and enthusiastic whole-carcass butcher who takes genuine pride in their craft. This is an opportunity to play an important role in a growing business, working with fully traceable, farm-reared lamb and producing both traditional and specialist cuts to individual chefs’ requirements.
The role
The successful applicant will be responsible for:
· Breaking down whole lamb carcasses safely, efficiently and with excellent yield control.
· Producing a full range of traditional and specialist lamb cuts.
· Boning, rolling, French trimming, portioning and preparing cuts to precise customer specifications.
· Preparing consistent restaurant portions with a high standard of finish and presentation.
· Working from individual chef and restaurant orders.
· Vacuum packing, labelling and preparing orders for dispatch.
· Maintaining accurate traceability, stock and production records.
· Monitoring carcass utilisation and helping to minimise waste through whole-carcass and nose-to-tail butchery.
· Maintaining excellent standards of hygiene, food safety and cleanliness.
· Cleaning, operating and maintaining butchery equipment safely.
· Helping us develop new cuts and products in consultation with chefs and the farm team.
· Contributing ideas as our premium farm-to-restaurant business grows.
About you
We are looking for someone who has:
· 2 years experience
· Proven experience in whole-carcass butchery, ideally with strong lamb butchery skills.
· Excellent knife skills and knowledge of both traditional and modern restaurant cuts.
· The ability to work accurately from customer specifications.
· A strong understanding of portion control, carcass yield and waste reduction.
· Good knowledge of food hygiene, HACCP, allergen control and meat traceability.
· Excellent attention to detail and pride in the quality and presentation of their work.
· The ability to work independently, organise production and meet customer deadlines.
· A reliable, practical and flexible approach.
· An interest in local food, farming and producing exceptional-quality British lamb.
· Good communication skills and the confidence to discuss products and specifications with chefs.
A recognised butchery or food-hygiene qualification would be advantageous, although relevant practical experience is particularly important.
A full driving licence and access to transport are desirable due to our rural location.

Hours
Occasional flexibility may be required to meet restaurant orders and seasonal demand. Any weekend requirement will be agreed in advance.
