Sous Chef

Brighton Seafront
Pay: Competitive (depending on experience) + tronc

Join our kitchen crew at our lovely seafood restaurant on Brighton Seafront, baby! Woooo!

We're looking for an experienced Sous Chef (or a seriously capable Chef de Partie ready to step up) to join our already FABULOUS kitchen team.

Please only apply if you have solid experience working in a busy professional kitchen (and a f****** fantastic sense of humour). Unfortunately, we won't be considering applications without this.

We're a little independent restaurant with a focus on coastal-inspired cuisine, laid-back fine dining and seriously good vibes.

When it's busy (and it often is), it's full tables, fast tickets, phenomenal food, and a proper buzz. It's the kind of place where services fly by... but only if you're someone who can keep up.

(Ticket starers and vape-o-holics... this probably isn't your place.)

The role

You'll be supporting the Head Chef with the day-to-day running of the kitchen, leading service when required, working across every section, and helping ensure every plate leaves the pass looking exactly as it should.

It's fast-paced, physical, and detail matters.

On our busier days you'll be working as part of a small kitchen team. On quieter services you'll need to be comfortable running the kitchen solo, so confidence, organisation and consistency are really important.

What we're looking for

Strong experience as a Sous Chef or an exceptional Chef de Partie ready for the next step.
Someone who's calm, organised and genuinely enjoys cooking great food.
You work with pace and purpose. Tickets don't cook themselves.
You notice problems before they become problems.
You take pride in every dish that leaves the kitchen.
You're reliable, hardworking and want to prove yourself.
You're happy working as part of a team but can confidently lead a service when needed.

Let's be clear...

If you're nonchalant, "too cool for school", permanently attached to your phone, allergic to cleaning, or just looking to coast through service... this won't be the right fit.

We (the owners) will happily roll up our sleeves to unblock a smelly drain... and we expect you to do the same when some numpty forgets that linguine and drains aren't a fantastic combo.

But there's one thing that's even more important to us than cooking great food...

We're building a kitchen where people genuinely enjoy coming to work.

That means treating every single person with respect — whether they're washing pots, running food, leading service or owning the business. We don't care how talented someone is if they make everyone else's day worse.

We take the work seriously, but not ourselves.

No shouting. No bullying. No inflated egos. No dramarama.

Just good people, cooking great food, looking after each other and having a bloody good laugh along the way.
