About Us

We are relatively new artisan bakery in Bristol, built around quality, craft, and attention to detail. Our focus is simple: exceptional sourdough, refined pastries, and a product offering that feels premium, thoughtful, and consistent.

This is not a high-volume, low-quality operation - we care deeply about ingredients, process, and presentation. With a newly renovated space and plans to expand into a larger production site, this is an opportunity to be part of something from the ground up.

The Role

We are looking for a Head Pastry Chef to lead our pastry offering - someone highly skilled, detail-obsessed, and passionate about producing pastries that are as beautiful as they are delicious.

You will have creative ownership, oversee production, manage a small team, and play a key role in shaping the identity of the bakery.

Key Responsibilities

Lead and manage all pastry production
Create and maintain consistently high-quality laminated products
Oversee and train junior staff
Contribute to menu development and seasonal specials
Maintain high standards of organisation, cleanliness, and efficiency
Work closely with the Head Baker to ensure a cohesive offering
Take ownership of pastry quality, presentation, and innovation

What We’re Looking ForTechnical Expertise

Advanced experience with laminated doughs (essential)
Strong ability in: Croissants, Pain au chocolat, Danish pastries, Cookies, Brownies
Deep understanding of fermentation, butter quality, and dough handling
Ability to produce clean, defined layers and premium finishes

Creative & Product Development

Passion for developing new pastries and seasonal items
Strong eye for aesthetic detail and presentation
Ability to balance creativity with consistency

Leadership

Experience managing or mentoring a team
Calm, organised, and professional under pressure
Takes ownership and pride in their section

Bonus (Not Essential)

Experience with artisan bread or sourdough
Experience in a high-end bakery or patisserie
