Experienced Sous Chef – 4 Day Week

Real progression + development-focused role

4-day week Chef role in a high-standard restaurant with a dedicated development kitchen. Work with fresh pasta, live Mibrassa fire, and seasonal Scottish produce.

The Kitchen

This is a kitchen built for chefs who take pride in their craft and want to cook with purpose.

At the centre of service is our Mibrasa grill, where you’ll cook over live fire and coals, managing heat, timing, and flavour using exceptional Scottish produce.

Our kitchen is structured but dynamic:

Dedicated fresh pasta section producing pasta daily
Fast-paced, highly organised larder section
Live fire cooking on the Mibrasa
Weekly changing menus driven by seasonality and team input

We take huge pride in our pasta work, it’s one of the most hands-on and rewarding sections in the kitchen.

Experience with pasta is a bonus, but not essential. What matters is your willingness to learn. If you want to develop skills in extruding, stretching, and filled pasta, this is the right environment to do it.

We’ve trained chefs at all levels, from complete beginners to highly skilled pasta chefs, with a strong focus on technique, consistency, and craft.

You’ll join a brigade of chefs across all levels, working in a well-structured, high standard kitchen.

Working closely with our newly appointed Head Chef, you’ll collaborate with Development Chef Zack Brotherton on menus and ongoing development.

Owner Giovanna Eusebi leads the wider vision of the business, connecting the kitchen to media, marketing, and key hospitality partnerships.

The Role

As Sous Chef, you will:

Run a section during service
Prepare and cook high-quality ingredients with precision
Work across sections to support a smooth, professional service
Maintain high standards of cleanliness and organisation
Take part in training and development sessions
Contribute to menu ideas and weekly specials

Who We’re Looking For

Experience in a professional kitchen (CDP ready to step up)
A strong sense of pride in your cooking, knowledge, and standards
Ability to work across sections and deliver consistently high-quality plates
Passion for Italian cooking, produce, and technique
Calm under pressure with attention to detail
Positive, team-focused attitude
