The White Swan, Shawell is preparing to reopen and is seeking an experienced and driven Bar & Restaurant Manager to lead our Front of House operation. This is a unique opportunity to take a leading role in relaunching a well-known local venue and building a reputation for outstanding hospitality, quality food, and a thriving bar operation.
We are looking for a hands-on hospitality professional with strong bar management experience, excellent leadership skills, and a passion for delivering exceptional customer service.
The Role
As Bar & Restaurant Manager, you will be responsible for the overall management of the front of house team, bar operation, and customer experience. You will be expected to lead by example, maintain high service standards, and ensure the smooth and profitable running of the business.
A significant part of the role will involve managing a busy bar operation, including stock control, cellar management, drinks profitability, staff training, and ensuring compliance with licensing regulations.
Key ResponsibilitiesBar Management
- Oversee the day-to-day operation of the bar, ensuring efficient and professional service
- Manage stock ordering, stock takes, stock control, and supplier relationships
- Monitor and control wastage, shrinkage, and gross profit margins
- Maintain cellar standards and ensure quality control of all draught products
- Develop and manage drinks menus, seasonal offerings, and promotional activity
- Ensure full compliance with licensing laws, age-verification procedures, and health and safety requirements
- Train and develop staff in product knowledge, upselling techniques, and responsible alcohol service
Restaurant & Front of House Management
- Lead, motivate, and develop the Front of House team
- Deliver exceptional guest experiences across both bar and restaurant areas
- Manage staffing levels, rotas, recruitment, and training
- Ensure high standards of cleanliness, presentation, and service
- Handle customer feedback and resolve issues professionally
- Work closely with the kitchen team to ensure smooth service and communication
- Support the delivery of private events, functions, and community activities
About You
You will ideally have:
- Proven experience managing a pub, bar, restaurant, or hospitality venue
- Strong knowledge of bar operations, stock management, cellar procedures, and licensing requirements
- Experience managing stock takes, GP margins, ordering systems, and cost controls
- A track record of building and leading successful hospitality teams
- Excellent customer service and communication skills
- The ability to work under pressure whilst maintaining high standards
- Strong organisational and problem-solving abilities
- A Personal Licence qualification would be advantageous but is not essential
