Full-Time Barista / Shift Leader / Senior Shift Leader

Today Bread – Walthamstow, London E17

Today Bread is currently recruiting for several full-time positions at our Walthamstow bakery and café, ranging from experienced Baristas and Shift Leaders to Senior Shift Leaders.

We are an independent bakery and café serving speciality coffee, fresh sourdough, pastries, sandwiches and seasonal food. We are looking for experienced, reliable and enthusiastic people who enjoy working in a busy hospitality environment and take pride in delivering consistently high standards.

Depending on your experience and leadership skills, you may join us as a Barista, Shift Leader or Senior Shift Leader. All available positions are full-time and require a hands-on approach, confidence behind the coffee machine and a strong commitment to customer service, teamwork and daily café operations.

For our leadership positions, we are particularly interested in candidates who are comfortable taking responsibility for a shift, supporting the team, maintaining service standards and helping the café run smoothly throughout the day.

Main Responsibilities

Coffee Quality and Service

Prepare and serve consistently high-quality coffee and espresso-based drinks in line with company recipes and standards.
Dial in espresso throughout the day, adjusting grinders and recipes when necessary to maintain quality and consistency.
Operate, calibrate and care for espresso machines, grinders, steam wands and other coffee equipment.
Steam and texture milk correctly for each drink, maintaining consistent temperature, presentation and quality.
Deliver friendly, knowledgeable and professional customer service at all times.
Confidently explain the coffee and food menu, recommend products and help customers make suitable choices.
Promote seasonal drinks, bakery items and other menu products through natural and appropriate upselling.

Shift Leadership

Lead the café team during assigned shifts and ensure service runs smoothly, efficiently and professionally.
Allocate tasks and positions based on business needs, team strengths and customer demand.
Set the standard for customer service, drink quality, cleanliness, punctuality and teamwork.
Support, guide and motivate team members throughout the shift.
Respond to customer concerns and resolve minor complaints professionally, escalating serious issues to the manager when required.
Monitor service speed, product availability and customer experience, taking action when standards are not being met.
Coordinate opening, closing and shift handover procedures accurately.
Ensure breaks are organised fairly without affecting service.
Communicate important updates, incidents, staffing concerns and operational issues to the manager.
Support the training and development of new and existing team members, providing clear and constructive feedback.

Stock, Cleanliness and Compliance

Keep the coffee bar, service areas and customer-facing spaces clean, organised and fully stocked throughout the shift.
Ensure daily and weekly cleaning procedures are completed correctly, including backflushing and the safe cleaning of coffee equipment.
Monitor stock levels of coffee, milk, syrups, takeaway packaging and other bar supplies.
Replenish stock promptly and report any shortages before they affect service.
Follow FIFO stock rotation procedures to maintain freshness, reduce waste and protect product quality.
Monitor product waste and ensure all waste is recorded accurately.
Report equipment faults, maintenance concerns, accidents and safety issues promptly.
Ensure the team follows all food safety, allergen, hygiene and health and safety procedures.
Support the wider café team during busy periods, including assisting with tills, food service, cleaning and customer areas when needed.

Requirements

Minimum two years’ experience working as a barista in a busy café environment.
Minimum one year’s experience working as a Shift Leader, Supervisor or in a similar leadership position.
Speciality coffee experience is strongly preferred.
Confident operating commercial espresso machines, grinders and steam wands.
Strong knowledge of espresso preparation, grinder adjustment and milk texturing.
Able to lead a team calmly and confidently during busy periods.
Comfortable making decisions, delegating tasks and handling day-to-day operational issues.
Strong attention to detail and a commitment to maintaining high standards.
Friendly, reliable, punctual and professional.
Clear and confident communication skills.
Positive, hands-on approach and willingness to support all areas of the café.
Able to give and receive constructive feedback.
Flexible availability, including weekends and early mornings.
Must be able to start shifts from 6:00am.
