Full job description

We’re looking for an experienced and passionate Lead Chef de Cuisine to guide our kitchen team, uphold exceptional standards of food quality and safety, and play a key role in shaping the future of our menu and the experience we deliver. We’re seeking someone with a genuine love for food, a thoughtful approach to menu development, and a creative mindset that brings care and curiosity to every dish.

Key Roles & Responsibilities

Oversee day-to-day kitchen operations, ensuring smooth service at all times.
Lead, motivate, and develop the kitchen team to deliver consistently high-quality dishes.
Organise staff rotas and ensure adequate staffing levels for service and prep.
Maintain the highest culinary standards, presentation, and portion control.
Work closely with the owners/chefs to develop and implement seasonal menus.
Ensure all dishes align with Bottle & Thyme’s brand, vision, and sustainability ethos.
Uphold and enforce food safety, hygiene, and allergen control procedures in line with UK regulations.
Oversee regular cleaning schedules and equipment maintenance.
Manage stock levels, carry out weekly stock takes, and order supplies within budget.
Monitor food costs, minimise waste, and ensure efficient portion control.
Build and maintain relationships with local suppliers.
Train new and existing staff on recipes, techniques, and safety procedures.
Foster a positive, respectful, and collaborative kitchen environment.
Conduct regular performance reviews and identify training needs.

Essential Traits & Skills

Strong leadership skills with the ability to inspire and guide a team.
Confidence in menu development, with the ability to contribute fresh, creative ideas.
Excellent communication and organisational abilities.
High standards for food quality, consistency, and presentation.
Resilient under pressure, with a calm and solution-focused approach.
Keen eye for detail and commitment to hygiene and safety standards.
Adaptable, with the ability to manage seasonal menu changes and new ideas.
Financial awareness to manage budgets, costs, and profitability.

Experience Required

Proven experience as a Kitchen Manager, Head Chef, or Senior Sous Chef in a fast-paced environment.
Strong understanding of UK food hygiene laws and Level 3 Food Safety qualification (Level 4 desirable).
Experience with stock control, ordering, and supplier management.
Passion for fresh, seasonal, and locally sourced ingredients.
