Restaurant Manager – The Three Fishes, Mitton

Salary: Competitive (dependent on experience) + service charge & tips

About Us

The Three Fishes reopened in November 2021 under the direction of Chef Patron Nigel Haworth. Since then, we have been proudly recognised by The Sunday Times as one of the best destinations for Sunday lunch and featured in the 2024 MICHELIN Guide.

Our ethos is centred around sustainability, seasonality, and exceptional hospitality, delivered by a passionate and committed team.

The Role

We are seeking an experienced and driven Restaurant Manager to lead our front of house team and oversee the day-to-day running of the restaurant.

This is a hands-on role requiring strong leadership, excellent organisational skills, and a genuine passion for delivering outstanding guest experiences. You will work closely with the Chef Patron and senior management team to maintain the high standards for which The Three Fishes is known.

Key Responsibilities

Lead, motivate, and develop the front of house team
Ensure exceptional service standards are consistently delivered
Oversee daily restaurant operations, including service, reservations, and staffing
Manage rotas, payroll oversight, and team performance
Maintain excellent communication between front of house and kitchen
Handle guest feedback professionally and resolve any issues promptly
Ensure compliance with health & safety, licensing, and company procedures
Drive a positive team culture and uphold the values of the business

What We’re Looking For

Previous experience as a Restaurant Manager or Assistant Manager within a quality-led establishment
Strong leadership and team management skills
Excellent knowledge in wine ideally with a WSET level 2 but not essential
Strong wine knowledge and a passion for guest dining experiences preferred
Excellent communication and organisational abilities
A passion for hospitality and attention to detail
The ability to remain calm and decisive in a fast-paced environment
A proactive and hands-on approach to service
