Full job description

Off the back of a fantastic award, celebrating Trefach as being voted the UK's best family campsite, we have an exciting opportunity for a Head Chef to join our hard-working kitchen team at Trefach Country Club & Holiday Park.

We are seeking a Head Chef with experience of running a busy service and who is calm under pressure. The ability to work at a fast-pace is crucial, particularly during school holiday periods when we are at our busiest both in the restaurant and on the terrace and poolside.

The ideal candidate must be passionate about food and all-things service service and will have proven experience managing and maintaining kitchen paperwork for EHO inspections. Producing new and updated menus throughout each season will be a key part of the role ensuring specials and seasonal offerings are available throughout.

Trefach Country Club & Holiday Park is naturally busier during school holidays and weekends and therefore we require someone that is flexible about their shifts and availability with a real 'can do' and team player attitude.

Duties will include:

· Carrying out all aspects of food preparation and ensuring good quality dishes are served.

· Taking full responsibility for the kitchen including team management and direction.

· Ensuring compliance with food safety standards and regulations.

· Monitoring food inventory levels via stock taking and ordering supplies as necessary paying close attention to margins and GP.

· Ensuring the kitchen cooking area is maintained to a good, clean standard after each shift.

· Maintaining a clean and presentable image at all times when on-shift.

· Occasionally, you will also help cater for ad hoc special events such a s birthday parties, end-of-season buffets, private parties etc.

Qualifications:

· Proven experience working in a professional kitchen environment.

· Knowledge of a variety of cooking techniques and food presentation.

· Confidence and proven experience applying cost-saving measures when ordering stock.

· Ability to work in a fast-paced environment whilst maintaining attention to detail and keeping a calm demeanor.
