The Role:
We are looking for an experienced Junior Sous Chef to join our kitchen brigade. You'll work alongside Head Chef Matt Heeley, whose career has taken him through some of the UK's most renowned kitchens including Angela Hartnett's Murano, Phil Howards The Square, The Angler, 28 Market Place and The Botanical Room's at The Newt in Somerset.
Drawing on experience gained in Michelin starred and award-winning kitchens, Matt is passionate about showcasing the very best Scottish produce, mentoring ambitious chefs and creating memorable dining experiences that celebrate the Highlands’ exceptional larder.
As part of our close-knit team, you’ll have the opportunity to learn a wide range of techniques across every section of the kitchen. From whole animal butchery and fresh pasta making to pastry and modern cooking techniques, you’ll be encouraged to develop your craft in a supportive, ambitious environment. We pride ourselves on producing as much as possible in-house, giving you hands on experience and the chance to grow under great mentorship.
We are a family-run business with a genuine passion for showcasing the very best locally sourced Scottish produce. Working closely with trusted suppliers, we have access to outstanding ingredients including hand-dived scallops, native lobster, wild venison and locally reared beef. We’re looking for someone who shares our passion for delicious food and is eager to develop their skills in a high-end dining environment.
The Ideal Candidate:
Previous experience in a quality restaurant is preferred but not essential. More importantly, you’ll be passionate about food, excited to learn and committed to developing your career. You’ll be creative, motivated, and thrive in a fast-paced environment, with a strong eye for detail and the ability to work calmly under pressure.
Key Responsibilities
Assist with the preparation and service of exceptional dishes
Support stock ordering, cost control and minimising waste
Prepare meat, fish, vegetables, fresh pasta and pastry to the highest standards
Receive and organise deliveries while maintaining stock rotation
Ensure food hygiene and cleanliness standards are consistently met
Work closely with the Head Chef to maintain consistency and quality throughout service

Competitive salary of £34,000 per annum plus share of tips
45 hours per week
28x days annual holiday (pro-rated) that includes service charge
