Bar Manager – Coyo Taco London | £18.00 per hour | Full Time | Tuesday – Sunday Orchard Place, SW1 (1 minute from St James's Park station)

About Coyo Taco

Coyo Taco started as a little taco shop in Wynwood, Miami in 2014 and is now a global brand with sites across the US, Portugal, Paris, Panama and the Dominican Republic. London is next.

Our motto is simple: todo es fresco, everything fresh. Tortillas hand-pressed daily. Guacamole smashed to order. Ingredients authentically cooked. We do modern Mexican street food properly, in a place that's loud, friendly and fast.

And then the kitchen winds down, and something else begins.

The Bar

Tucked behind the restaurant is our speakeasy: a small, intimate room built around music and mezcal. A dedicated DJ booth. A high-end listening sound system. A bespoke cocktail menu with tequila and mezcal at its heart.

This is a proper late-night destination, and we need the right person to own it.

Last orders at midnight. Small team. High standards. Real atmosphere.

The Role

You'll be our Bar Manager, the person who sets the tone, leads the team and makes sure every pour is worth remembering. You'll work closely with our leadership team as we build something from scratch, and you'll have a genuine say in how the bar develops as we grow across London.

You’ll be well versed in the classics, and we’ll provide full training on our bespoke cocktail menu, so you’ll be confident recommending and mixing our signature drinks.

What you'll do

Lead the bar across evening and late-night service through to midnight
Open and close, prep mixes and garnishes, run pre-shift briefs
Train and coach your Bartenders on technique, speed and guest experience
Own the spec sheet, stock takes, par levels and supplier deliveries
Maintain quality and consistency however busy it gets
Take full ownership of allergens behind the bar, every cocktail, garnish and batch

What you'll bring

1+ year as a Bar Supervisor or Bar Manager, ideally in a high-volume or cocktail-led environment
Real working knowledge of mezcal and tequila, categories, brands, ageing, flavour profiles
Confident with cost control, stock admin and running a tight operation
A leader who raises the energy in the room, not just someone who pours well
Right to work in the UK
