Are you a master of the flame?

The Prince of Wales Hotel isn't looking for a "clipboard manager." We are seeking a culinary powerhouse to lead our kitchen from the front. We are a destination for meat enthusiasts, and we require a Head Chef who treats every cut of beef—from dry-aged ribeyes to technical smash burgers—with absolute reverence.

If you thrive on the line, possess deep-rooted knowledge of aged meats, and lead with "boots on the ground" during peak service, we want you at the helm.

The Role: Precision & Performance

As our Head Chef, you will be the driving force behind a menu centered on premium cuts and high-intensity griddle work. You’ll be working with the finest locally sourced ingredients and high-end dry-aged meats.

Key Responsibilities:

Lead from the Front: Stay hands-on during service, cooking steaks to precise temperatures and managing high-volume covers with ease.
Meat Mastery: Expertly handle, prep, and execute the cook on premium aged and dry-aged cuts.
The Art of the Burger: Perfecting the high-intensity technical nuances of the premium smash burger.
Kitchen Management: Oversee all food safety (HACCP), hygiene standards, and inventory.
Culture: Foster a professional, high-energy environment for the kitchen brigade.

What We Are Looking For

Experience: Minimum of 10 years in professional kitchens, with significant time spent in a dedicated steakhouse or high-end grill environment.
Technical Expertise: Deep knowledge of beef cuts, fat content, and the aging process.
Artistry: "Culinary Artist" levels of plating and consistency.
Leadership: A calm-under-pressure mentality and a reputation for being reliable and punctual.
Certifications: Level 2 Food Hygiene essential (Level 3 preferred).
Status: Sponsorship is available for UK-based applicants only.
