Full job description

TRADE is seeking an experienced and highly capable Head Baker to lead the bakery function for an important new phase of the business.

We are an independent London café group known for quality coffee, thoughtful food and well-executed neighbourhood sites. We are now developing a new bakery-led site in North London and are looking for a baker with the technical ability, judgement and leadership to establish and run the operation to a high standard.

This role will involve responsibility both for the new site and for helping shape bakery production more broadly across the group. It is therefore a significant appointment for the business and an excellent opportunity for the right person to take ownership of a serious bakery operation from an early stage.

The successful candidate will be expected to lead on production, standards, consistency, team development and day-to-day organisation. We are looking for someone who combines strong craft skills with discipline, reliability and commercial awareness.

Key areas of experience should include:

bread production
viennoiserie and laminated pastry
enriched doughs
production planning and workflow management
quality control and consistency
ordering, stock control and minimising waste
leading, training and developing a bakery team

The right candidate will be:

technically strong
well organised
calm under pressure
detail-oriented
capable of maintaining high standards consistently
interested in building and developing a bakery operation, not simply maintaining one

Pay: £40,000.00-£50,000.00 per year
